Thanks for bringing up that point. When we have made them, we took them out after 1 hour and never earlier or later BUT that doesn't mean someone else's oven wouldn't be sooner. The Starter makes them moist and most afbread recipes take 1 hour to cook for that reason. If you want, you can check at 45 min and just make sure the center has risen and toothpick for the batter comes out clean!
