Super Easy Chicken Lime Fiesta Bowl Recipe

Get it while it's HOT! One-bowl recipes are IN right now! They are easy to make and perfect for quick summer meals. This meal takes 30 minutes to make. I will share the recipe if you do me a HUGE favor? Please don't let my husband know how easy this recipe is to make.




Chicken Lime Fiesta Bowl
Servings 6


Ingredients
1 box of Zatarain's® Cilantro Lime Rice Mix
1 Tbsp butter for rice mix
1 can black beans
4-6 avocados
1 batch Pico de Gallo (my easy recipe) or salsa
1 bunch cilantro
2 limes
2 jalapeños
1 lb. chicken breast
2 cans Rotel Tomatoes (diced tomatoes with chilies)


Directions
1. Cook rice according to the box. It takes 25 minutes so start this first.
-Follow cooking instructions.


2. Next immediately start chicken. Put chicken in a pan with a lid.
-Dump in both cans of Rotel tomatoes with 1/2 cup of water. Let simmer with lid on.
-After 15 minutes turn chicken over. Let cook another 10-15 minutes.
-Then shred chicken and keep in pan with lid on until ready to serve. You keep on low
if done before ready to serve.


3. While food cooking prep rest of ingredients. I put all in separate containers.
-Open can of beans, rinse with water and let drain.
-Coarse chop up avocado. Each serving gets 1 avocado or 1/2 if you prefer.
Only cut what you need for this meal.
-Coarse chop cilantro.
-Cut lime into wedges.
-Coarse chop jalapeños

4. Make Pico de Gallo or use salsa. If you are making mine, make sure to get the
ingredients, too! It is super easy.

5. Put it all together. I love this part of bowl recipes. Everyone can make their own.
Just so you know, the rice & chicken do not need to be hot to serve this. I keep all
ingredients separate and put away in fridge for next meal.

6. Kitchen Tips: Make it quicker by cooking chicken in the Instant Pot.
Same ingredients. Time will be 10-12 minutes. Or I've been known to grab cooked
chicken from the store. Do whatever works for you. Switch up any of the ingredients
that suits your family. No black beans in the pantry but you have refried beans or
great northern? Use them. Make it your way!

Cheesy Onion Garlic Bread Recipe is Oooey Gooey Delish!

Do you need to bring something to a potluck but not sure what to bring? Are you tired of bringing the same old thing? Kick up any potluck with a loaf of this Cheesy Onion Garlic Bread. It will be the hit of the party!

This bread is fantastic. At home I make it with heavy meat dishes like ribs or a roast. It also goes perfect with pasta dishes. Well to tell you the truth, this bread is just oooey gooey good anytime you are in the mood for it. I haven't done this but it would be perfect as just an appetizer served with pizza sauce (meaty pizza sauce). It goes great with beer, too! Make it and Enjoy! 


Cheesy Onion Garlic Bread Recipe

Ingredients

1 loaf of French Bread
1 and 1/2 sticks of butter
2 teaspoons garlic powder (or minced fresh garlic)
1 medium to large onion, sliced paper thin and some randomly chopped into smaller bits
10-12 oz. swiss OR mozzarella cheese slices or a combo of both (which I do)
1 1/2 teaspoon poppy seeds
1/2 teaspoon dry mustard

Directions

1. Sauté onions in butter until almost transparent on low-medium heat. Add garlic powder, poppy seeds and mustard. This can take 5-7 minutes. 

2. While onions are sautéing, score (use a bread knife and cut into the bread almost to the bottom) bread diagonally on a cutting board. Then turn bread and score diagonally again so you have a diamond pattern. Place on top of a large piece of aluminum foil.

3. Check onions. If onions are soft. Turn off heat and just let pan sit on stovetop. If not done, let it continue to cook on low. 

4. Stuff cheese slices into EVERY little slit on the bread. Feel free to add more if you want. Some slits can even have double cheese.

5. Drizzle the hot onion mixture over top of the bread. Make sure to cover everything!

6. Wrap in foil and bake at 375 F. for 15 minutes. Unwrap slightly and bake another 10 minutes to crisp the top...serve and love!

Kitchen Tips:

2- I've made this bread without onions (not the same but it tasted great). So if you don't want the onions just melt butter really well and add spices and just continue rest of the recipe as is. 

3- Have fun with the recipe and make it yours. Try different cheese, try different seasonings, use different breads, etc! Modify this recipe and make it suit your dietary needs being gluten free, dairy free, vegan, etc. Don't look at a recipe and say I can't eat that...make it into something you can eat. Have fun cooking. 

4- Again it is great with a heavy meat meal like ribs. But we've been loving it as an appetizer and goes great with beer!

Real People Real Health Changing Results with Healthy Recipes

Do you ever wonder who all those people are when you see weight loss before and after photos? If you log into my Team Beachbody Site you will see a lot of these success stories. Anyone who drinks Shakeology and/or who has purchased Beachbody programs can submit results in the "Beachbody Challenge". This one is super-simple "Mocha Chiller": 
•1 scoop Chocolate, Chocolate Vegan, or Vanilla Shakeology 
•1 cup brewed coffee (cooled, ice to taste) 
TIP: Add a little bit of milk, or a milk alternative, and some cinnamon for the cappuccino or latte effect!

21 Day Fix {Healthy Recipe} for Extra Veggie Spaghetti

January is National Soup Month and I have a lot of tasty soups to share with you this month. Today I'm taking a soup break to give you a very healthy extra veggie spaghetti recipe hubby and I created together (something weird is happening to us...we will celebrate 22 years of marriage this year and all of a sudden we are eating healthy together, exercising together and even cooking together.) I posted this yesterday on my personal Facebook page what we were doing in the kitchen and my friends wanted more info. So this recipe is for them and for you! 

Hubby and I (our family) are eating clean with the 21 Day Fix. The healthy eating plan has been in our kitchen since October and it is the BOMB!  Not only are we eating foods super clean (means fresh foods, healthy foods and easy prep and cooking) we are also exercising and feeling great. Easy & Healthy Extra Veggie Spaghetti

3 servings

Ingredients

3 yellow squash (can substitute)
1 bell pepper (yellow, orange or red), coarse chopped
1 small onion, coarse chopped
1 28 oz. can non salt tomato sauce
1 tsp each of crushed red pepper, tarragon, basil, parsley, oregano, garlic powder
2 tsp minced garlic
1 tsp olive oil with dash of the above spices 

Directions

1- In a large sauce pan, bring bell pepper, onion, tomato sauce, minced garlic and the 1 tsp spices to a simmer. Cook for 20-30 minutes.
2- While sauce is cooking, get out the Vegetable Spiralizer and "spiralize" the yellow squash. 
3-Right before sauce is done and right before you are ready to eat, add 1 tsp olive oil to a large sauté pan. Once hot, add in the squash. Stir around for 2-3 minutes and add a dash of all the spices to the yellow squash.
4-Add squash noodles to your plate and top with sauce.

Kitchen notes

1-I added in 3 chicken breast, large chunks into my spaghetti sauce to cook.
2-Perfect recipe for the 21 Day Fix healthy eating plan. 
3-I personally love making my spaghetti sauce in a crockpot. This can be added in a small crockpot for 2-4 hours on high.
4-I never make a small batch of spaghetti sauce. I quadruple this sauce recipe. I can use it for leftovers or freeze it for a later meal. 




Tips on using the Vegetable Spiralizer



  • This is one of the easiest "kitchen gadgets" we own. It takes just a few seconds to add the blade of your choice. 
  • Put in your veggie (you might have to cut to size) and spiral away. 
  • It was super easy to rinse and clean off. We do not have kitchen space to leave it out so we put it back in the box and store on our extra appliance shelf.

12 Days of Christmas ideas with Six Sisters Stuff Giveaway

I have blogged many times about the Six Sisters' STUFF and how I think that I'm one of their long lost sisters. No joke they are one of my top favorite blogs for food and fun! I'm always inspired by their projects and recipes and the ones that they share from other bloggers.

Root Beer Reindeer - This project is in the 12 Gifts for Neighbors. It is a super easy project that can be given to the neighbors or individual bottles to your kids' friends or teachers.

Materials
  • 9 brown pipe cleaners
  • Six pack of root beer
  • 12 (15 millimeter) goggly eyes
  • 6 (1/2 inch) red craft pom-poms
  • hot glue
  • gift tags

Directions
  • Cut 3 pipe cleaners in half, then those halves in half to make 12 quire length pieces; set aside.
  • Wrap 1 full length pipe cleaner around each bottle, just below the cap.
  • Twist the pipe cleaner in the back of the bottle and bring the ends up on each side to make antlers.
  • Twist 1 quarter length pipe cleaner around each main antler, about 1 inch from the top to make "branches" on the antlers.
  • Glue 2 google eyes on each bottle's neck, about 1 1/2 inches below the cap. 
  • Glue 1 pom pom beneath each set of eyes.
  • Attach a gift tag to the 6 pack that reads: "We're rooting for you to have a very Merry Christmas!"

This Pumpkin Pie Cake is in the 12 Spectacular Christmas Treats chapter. It is delish! 




Pumpkin Pie Cake - cross between pumpkin pie and cake! This dish is pumpkin-y, moist and everyone loves it. Serve as it, with whipped cream or even ice cream.

Ingredients

1 15 oz. can pure pumpkin
1 12 oz. can evaporated milk
1 1/2 cups granulated sugar
3 eggs, beaten
1/2 tsp salt
1 tsp ground cinnamon
1 tsp pumpkin pie spice
1 yellow cake mix
1 cup butter, melted
1 cup chopped pecans or walnuts

Directions

Preheat oven to 350 degrees F. Grease a 9 X 13 inch baking dish and set aside. 
In a large bowl mix together the pumpkin, evaporated milk, sugar, eggs, salt, cinnamon, and pumpkin pie spice. Pour into prepared pan. Sprinkle dry cake mx evenly over the entire pumpkin mixture. Be sure to use all of the cake mix. Pour melted butter evenly over the top of the cake mix. Top with chopped nuts. Bake 55 minutes until the top begins to brown and set. Serve warm or cold. 
Makes 20 servings.

Easy Sugar Free Cream Cheese Frosting and Giveaway #MonkFruitInTheRaw #mc #sponsored

There was a time a few years ago that I almost always baked sweet treats for my family at least once a week. This went to a screeching halt over 2 years ago when I started my healthier lifestyle journey. I didn't want to bake sweets and be tempted to eat them. So to control that I just stopped making sweets. Do you make sweets for your family? Do you use sugar? Do you use substitute sugars? Today I'm going to share information on Monk Fruit In The Raw as a way to cut down on the sugar at home and yet enjoy a few treats here and there. I participated in an Influencer Activation on behalf of Mom Central Consulting for Monk Fruit In The Raw. I received product samples to facilitate my post as well as a promotional item to thank me for my participation.

A year or so ago I found out about Monk Fruit In The Raw as a form of sugar substitute. It is a vine ripened fruit native to South East Asia. This is a fruit sweetener and not just another chemically created sweetener. Monk Fruit In The Raw is a great way to reduce the sugar usage as well as a lower calorie option for those who are on a healthier lifestyle journey. Monk Fruit In The Raw has wholesome ingredients, taste great, has no sugar alcohols and can daily be substituted to the same amount of white sugar. If baking a recipe which involves rising and browning it is suggested to use only half of this and half white sugar. 

Monk Fruit In The Raw has been used in several of my own recipes as well as a few that I have tried from the Monk Fruit In The Raw Website. I haven't told my family that I have made the substitute and no one has asked. The reason for this is that the calorie-free sweetener doesn't have a chemical taste or a chemical aftertaste. No one can tell the difference! Besides a few of the recipes I have made, I also use Monk Fruit In The Raw in coffee, tea, lemonade, on fresh fruit, on cereal and anything else that requires sugar. I like the sweet taste when I need a little sweetness added to my food. I still try and avoid sweets but every now and again I do enjoy knowing that I can have a little which is made from real fruit. 

Here is a super simple cream cheese frosting that works great for cakes, cupcakes and cookies. 


Sugar-Free Cream Cheese Frosting

MONK FRUIT IN THE RAW Recipe | MAKES 1 1/2 CUPS

Ingredients

1(8-ounce) package cream cheese, at room temperature
2tablespoons unsalted butter, softened
2tablespoons non-hydrogenated vegetable shortening
2tablespoons Monk Fruit In The Raw® Bakers Bag or 3 packets Monk Fruit In The Raw®
1/2teaspoon vanilla extract

Preparation

In a mixing bowl, use a hand mixer on medium speed to beat the cream cheese, butter, and shortening until they are combined and fluffy, 2 minutes. Add the Monk Fruit In The Raw® and beat until the frosting is smooth. Mix in the vanilla. If not using immediately, refrigerate the frosting in a sealed container for up to 1 week.
To use refrigerated frosting, work it with the back of a wooden spoon until spreadable.

Nutrition Information

Per 2 TB serving (for frosting 12 cupcakes – 2 TB per cupcake): 103 calories, 11 g fat 6 g saturated fat, 1 g carbohydrate, 1 g protein, 0 g dietary fiber, 26 mg cholesterol, 56 mg sodium

Skewered Jerk Chicken with Florida Orange Marinade {Tailgating Recipe}

Football season is underway. If you aren't a football fan then you might not be aware of this unless your friends on Facebook are fans. I say this because I have friends from all over the place who are fans of the Rams, Saints or Bears which are teams that I cheer for. I also see friends who are die-hard fans of the Steelers, Packers and yes even the Patriots. I have found that even if I don't turn on my TV, I can get the scoop of all of my favorites in my Facebook newsfeed. 

One of the best things about Football season is tailgating. I love all of the fun recipes that can be made ahead of time or cooked during the tailgating party. Families who tailgate have long standing traditions where they go every time their team is at home or just for certain games.

We made Skewered Jerk Chicken with a Florida Orange Marinade. It was delish. I honestly forget about using OJ as a marinade and loved the chance to try out this recipe on my family. Here it is for you to try, too!



Skewered Jerk Chicken with Florida Orange Marinade

Ingredients

1/4 cup 100% Florida Orange Juice
1 tablespoon lime juice
1 tablespoon jerk seasoning
1 teaspoon ginger, minced
Skewers
2 lbs chicken

Directions

Combine all the ingredients in a bowl, mix thoroughly.
Add chicken strips to the skewers.
Pour marinade over the chicken.
Cover and refrigerate at least 3 hours or preferably overnight.
Grill when ready.

Celebrate National Coffee Day September 29th #DunkinAtHome #sponsored #mc

I love coffee. There I admitted it openly right here on my blog. This comes as no surprise to many of you and I know that a lot of you love coffee, too! I'm not too much of a coffee snob because I love trying out new beans and of course mixing them in with our regulars. One brand that I do enjoy at home is Dunkin' Donuts. They have a new line that I'm sharing with you today. Hope you like it and give the new brew a try. I participated in an Ambassador Program on behalf of Mom Central Consulting for Dunkin’ Donuts. I received product samples to facilitate my In-Home party as well as a promotional item to thank me for participating.

We do not have a Dunkin' Donuts near by so I do love heading out to my local store to pick up their coffee to brew at home. It is great to be able to enjoy Dunkin' At Home whenever we want. With the bakery flavor dunked in, only Dunkin’ Donuts gives coffee fans so many favorite bake shop coffee flavors to enjoy at home – pastry not included! 

I was thrilled to get a party box full of Dunkin' Donuts Coffee & mugs to pass out to my coffee drinking family and friends. Some of the best people drink coffee! Not only do they love to drink coffee but they love any occasion to get together and drink it with others. 


Here are some photos from our coffee sharing fun. Everyone loved their mugs and new coffee. No one had heard of the new Bakery Series which I had shared that the Cinnamon Coffee Roll was my favorite. The other flavors in this series includes Chocolate Glazed Donut, Blueberry Muffin, Jelly Donut, Old Fashioned Donut and Caramel Coffee. 

Dunkin' Donut coffee is for all ages! I had as young as a 15 year old to as old as a 70+ year old go for the coffee. Everyone has their own favorites but I do have to say that the Cinnamon Coffee Roll and Old Fashioned Donut were the favorites. I personally love the actual baked DD blueberry cake donuts and Jelly Donuts so to drink the coffee I was thrilled to see how close the taste was to the actual bakery treats. The same was said for the Chocolate Glazed Donut. If you are a fan of DD treats then do give this Bakery Series a try. 




My girls love iced coffee and we now have new recipes shared by the Hungry Girls' blog. You must pop over and check out all of the Hungry Girl Iced Coffee Recipes and Videos. We loved the Chocolate Cinnamon Coffee Malt but the hands down favorite is the Sweet & Spicy Chocolate Glazed Donut Coffee. The best part is that you probably have all of the ingredients on hand at home to create these coffee treats. 

Sweet & Spicy Chocolate Glazed Donut Coffee

Entire recipe: 53 calories, 1g fat, 10mg sodium, 8.5g carbs, 0.5g fiber, 3.5g sugars, .5g protein

Prep:
 5 minutes
Cook: 5 minutes or less
Chill: 1 hour

Ingredients:
1 tsp. mini semi-sweet chocolate chips
1 packet no-calorie sweetener
1/8 tsp. cinnamon
Dash cayenne pepper, or more to taste
6 oz. fresh-brewed Dunkin' Donuts® Chocolate Glazed Donut coffee
2 tbsp. fat-free liquid coffee creamer 

Directions:
In a microwave-safe mug, combine chocolate chips, sweetener, cinnamon, and cayenne pepper. Add 1 oz. (2 tbsp.) hot coffee, and microwave for 1 minute, or until chips have melted. Mix vigorously until uniform.

Add creamer and remaining coffee, and stir well. Refrigerate until chilled, about 1 hour. 

Stir well, transfer to a tall glass filled with crushed ice, and enjoy! 

MAKES 1 SERVING



As always with Dunkin' Donuts, you can expect high quality coffee beans. They always taste fresh, rich, smooth and yes delicious! I do love how the brand is sharing their baked goodies in the form of coffee flavors. I think the Bakery Series is great marketing because it totally plays on our taste buds and memories of going into their coffee shop to pick out our favorite goodies. I rarely eat sweet anymore so I do appreciate the Bakery Series and so do my friends for the same reason.
