Skewered Jerk Chicken with Florida Orange Marinade {Tailgating Recipe}

Football season is underway. If you aren't a football fan then you might not be aware of this unless your friends on Facebook are fans. I say this because I have friends from all over the place who are fans of the Rams, Saints or Bears which are teams that I cheer for. I also see friends who are die-hard fans of the Steelers, Packers and yes even the Patriots. I have found that even if I don't turn on my TV, I can get the scoop of all of my favorites in my Facebook newsfeed. 

One of the best things about Football season is tailgating. I love all of the fun recipes that can be made ahead of time or cooked during the tailgating party. Families who tailgate have long standing traditions where they go every time their team is at home or just for certain games.

This tasty fruit is a favorite secret ingredient which adds an extra zing and slight sweetness to dishes. 

We made Skewered Jerk Chicken with a Florida Orange Marinade. It was delish. I honestly forget about using OJ as a marinade and loved the chance to try out this recipe on my family. Here it is for you to try, too!



Skewered Jerk Chicken with Florida Orange Marinade

Ingredients

1/4 cup 100% Florida Orange Juice
1 tablespoon lime juice
1 tablespoon jerk seasoning
1 teaspoon ginger, minced
Skewers
2 lbs chicken

Directions

Combine all the ingredients in a bowl, mix thoroughly.
Add chicken strips to the skewers.
Pour marinade over the chicken.
Cover and refrigerate at least 3 hours or preferably overnight.
Grill when ready.

Sweet Chocolate Peanut Butter Cheese Ball Recipe

I'm a visual learner! I see a picture of a recipe or a plate of food and that is how I decide if I want to make it or not. That is where this peanut butter ball recipe came about. The week of Super Bowl Sunday I found it on Google Plus. I knew that I had to make it for my family and friends. Stop over and visit the original recipe (I made a few changes) at A Worthy Read. Peanut Butter Cream Cheese Ball

Sweet Peanut Butter Cheese Ball Dip

Ingredients

8 oz Cream Cheese softened
1/2 cup Powdered Sugar
1 cup Peanut Butter
1/4 cup Brown Sugar
1 cup mini Chocolate Chips
1 cup Peanut Butter Chips

Directions


1-Combine all ingredients, except chips, in a mixing bowl to combine.
2-Form mixture into a large ball and roll into the peanut butter and chocolate chips. Another variation is to use a cookie dough scoop and form bite size balls. Roll each into the chips.
3-Cover and place in fridge for at least 1 hour before serving.
4-Serve with Nilla Wafer, Graham Crackers, etc.

Mini Slider Recipe {Game Day Recipe}

My family loves sliders. I make a variety but one of our all time favorites are these mini sliders I'm sharing with you today. If you have never made them get the ingredients and make them for Super Bowl Sunday! They make the perfect game day recipe or anytime you need a quick and tasty meal!

Game Day Mini Slider Recipes

Mini Sliders

Ingredients

1 1/2# ground beef, turkey or chicken (I always use turkey)
1 container of chopped dried onions (cheapest for us is the 5th Season brand)
1 teaspoon seasoning salt
Mustard
Dill pickles, thin slices
American cheese slices
Hawaiian Buns

Directions

1-Add the entire container of onions to the bottom of a 9 X 13 baking dish and then spread out the seasoning salt.
2-Lay out the meat on top of the onion mixture. It will be thin and cover the entire pan. Try to just put it on the onions and not actually mix it around. The onions are a separate layer under the meat.
3-Bake at 375 degrees for 35 minutes (less or more depending on your oven)
4-While baking, cut buns in half and add a quarter size mustard to top half of bun then add 1-2 pickle slices. Fold cheese into 1/4ths.
5-When meat is finished, pull out and cut into 16 squares. Top each with a piece of cheese, put back in oven for 1-2 minutes to melt.
6-Take out and add meat to bun and top. Eat immediately.

Kitchen Notes: Make yours your way by using various meats, cheeses, pickles, etc. If we aren't going to eat them right away, I will cook the meat ahead of time. When time to eat, top with cheese and warm in oven.

{Easy Game Day Recipes} Chili Cheese Nachos

From Fall through Winter we love Chili. My easy chili recipe is below. I make it at least every 3 weeks. When we need a fun recipe, especially for game day or a Super Bowl Recipe we take the chili and turn it into nachos! These nachos use Fritos. Enjoy them! 


Chili Cheese Nachos

Ingredients

Any Chili recipe (I use Easiest Chili Recipe EVER)
Large dip size Fritos
Shredded Cheddar cheese

Directions

1-Make Chili
2-Add Fritos to a plate
3-Add some shredded cheese
4-Scoop on chili without the juice
5-Add on shredded cheese, jalapeños, black olives, onions,etc
6-Eat

Fried Dill Pickle Chips Recipe {Restaurant CopyCat Recipe}

These Fried Dill Pickle Coins or Chips are from Mom's VERY BEST Recipes Cookbook by Gooseberry Patch. We've had these at quite a few restaurant but hands down these taste better! Try this appetizer at your next party! These would be great for a game day recipe, too! The first time I made them was for Super Bowl Sunday! This is a yummy copycat from the expensive restaurant fried pickles! Make your own and save money!


 Fried Dill Pickle Coins

Ingredients:
2 c. all-purpose flour
1/2 t. salt
1/4 t. pepper
2 eggs, beaten
1 c. milk
3 c. dill pickles, thinly sliced
oil for deep frying
Garnish: ranch salad dressing

Directions:  In a bowl, combine flour, salt and pepper.  In a separate bowl, whisk eggs and milk together.  Blot pickles well with paper towels.  Coat pickles with flour mixture, then with egg mixture.  In a large deep fryer, heat oil to 375 degrees*.  Add pickles, about 10 at a time, and cook for 3 minutes, or until golden, turning once.  Drain on paper towels.  Serve warm with ranch dressing.  Serves 6.

Easy Game Day Recipe Dill Pickle Dip

In a house full of teens we are always snacking on something. This is the perfect game day recipe dip because it is so easy to make and everyone who loves pickles loves this dip. This appetizer recipe is in one of my favorite cookbooks- Gooseberry Patch Quick & Easy Christmas.


Dill Pickle Dip

Ingredients
8oz pkg. cream cheese, softened
2 c. sour cream
5-6 whole dill pickles, chopped
1 1/4 t. garlic salt or to taste
pickle juice (optional)
potato chips

Directions
Mix together all ingredients except chips. Stir in pickle juice to get the consistency you want. Cover and chill 24 hours. Serve with chips. Serves 6-8.

MY KITCHEN NOTES: I didn't read the directions before planning the dip so I made it on the day we needed to eat it.  It was VERY TASTY and I wondered why you needed to wait 24 hours to eat it. We had leftover dip so I covered it and put it in the fridge. I pulled it out the next day and WOW I then discovered why you should eat it the next day. It was even better after the ingredients had time to form together. Very tasty and we will make this again, and again and again.

Pulled Pork Sliders Crock Pot Recipe

We love mini slider sandwiches.  This Pulled Pork Slider recipe now a new favorite of ours. We found it in the new, Gooseberry Patch Game Day Fan Fare Cookbook.

This recipe is called Pulled Pork Sammies in the cookbook but we renamed it Pulled Pork Sliders. This is a new game day and any day family favorite. We have cooked quite a few recipes from this delish cookbook and you will find some of them there, too.

Pulled Pork Sliders (Sammies)

Ingredients

3-5 lb Boston butt pork roast
28 oz can fire roasted diced tomatoes
2 12 oz cans Coke
1 1/2 c. brown sugar
3 T.. chili powder
12 sandwich buns, split

Directions

1-Place pork in a slow cooker and all the ingredients except the bungs.
2-Cover and cook on low setting for 8 hours.
3-Stir occasionally and cook until very tender.
4-Serve on buns and add sauce from slow cooker.


Pork Shred Tip-- If pork is tender, take 2 forks and pull it apart. I love this and use it all the time for shredding meat. This way you can do it while the meat is still hot and you don't have to touch it.

Kitchen Notes-
-My experience is that only 1 can of Coke was needed. My store was out of the butt pork roast so I just purchased the same meat amount pork roast. I get the pork roast that has fat on it just like the butt pork. If not the pork will be on the dry side.
-We served ours with the mini Hawaiian buns and a slice of cheddar cheese.
-This recipe made a HUGE amount of meat. We used the leftover the next day for our famous pork aka Pig Nachos.
-Yum!

{Super Bowl Recipes} Spinach Artichoke Focaccia with Fleischmann's yeast

Here is another easy Spinach Artichoke Super Bowl Recipes. It uses Fleischmann's Yeast for the Focaccia which turns a dip into  portable bread bites.

I am working on my Big Game Day recipes to share with family and friends. For the day, our group loves to prepare simple, tasty and savory recipes. I tried out this Fleischmann's Yeast recipe to see if it was worth taking on Sunday. It was a hit with my family so I will be making it for game day. They love spinach artichoke dip and this recipe make for a portable snack because it is layered and baked on top of a home made focaccia.


Do you cook or bake from scratch these days? I'm finding more and more that I am going back to the basics and baking from scratch. This focaccia recipe didn't take too long to make and the taste was so much better than a frozen one from the store. It was fresh and didn't have any added preservatives!


I was telling my teen, who helped me with this recipe, that 15 years ago I alway made my own bread, hamburger buns,etc. Over time I did stop baking bread from scratch because of all the easy to buy baked goods at the local store. Guess what? My pantry is stocked with Fleischmann's yeast so get ready for more made from scratch recipes here on my blog. I've already found a few more ideas from the Fleischmann's yeast baking website and plan to try out their Fleischmann’s Pizza Crust yeast.

Spinach Artichoke Focaccia


Spinach Artichoke Focaccia

Makes: 18 servings 
Prep Time: 25 minutes 
Proof Time: 30 to 40 minutes 
Bake Time: 30 to 35 minutes 


Ingredients

Bread:
2-1/2 to 3 cups all-purpose flour
1 envelope Fleischmann's® RapidRise Yeast
1 tablespoon sugar
1 teaspoon salt
1 cup very warm water (120° to 130°F)
2 tablespoons olive oil
2 tablespoons butter OR margarine, melted
1 tablespoon Spice Islands® Minced Garlic

Topping:
1 tablespoon butter OR margarine
1/4 cup minced onion
1 package (8 ounces) cream cheese, softened
1/4 cup grated Parmesan cheese 
1/4 cup mayonnaise
1/2 teaspoon Spice Islands® Garlic Powder
1 package (10 ounces) frozen spinach, thawed and drained 
1 can (14 ounces) artichoke hearts, drained and chopped
1/2 cup shredded Monterey Jack cheese

Directions

Combine 1-1/2 cups flour, undissolved yeast, sugar and salt in a large mixer bowl.  Add water and oil and beat for 2 minutes.  Add enough remaining flour to make a soft dough.  Turn out onto floured counter and knead 5 to 6 minutes, until smooth.  Cover dough and let rest 10 minutes.  Combine butter and minced garlic; set aside.



Roll or press dough to fit into a greased 13 x 9-inch pan.  Using wooden spoon handle or a finger, poke holes in dough every 1 to 2 inches.  Drizzle with garlic butter mixture.  Cover and let rise 30 to 40 minutes, until doubled.  Bake in a preheated 375°F oven for 20 to 25 minutes; remove from oven.



While focaccia is baking, make the topping.  Melt butter in a large skillet over medium heat; add onion and cook 2 to 3 minutes or until onion is soft.  Reduce heat to low and add cream cheese, Parmesan cheese, mayonnaise and garlic powder.  Stir until blended and softened.  Squeeze any remaining liquid out of spinach.  Add spinach and artichokes to skillet, stirring to blend.  Spread over partially baked focaccia.  Sprinkle with Monterey Jack cheese.  

Return to oven and bake an additional 10 minutes or until cheese is melted.  Best served warm. 

Kitchen Notes: We loved this and it tasted just as good warm as it did cold. One of the teens suggested to use less topping and add chicken next time to make it a meal. I thought that was a great idea and will add it next time. Check out my first Focaccia recipe from a few years back.
