Gooseberry Patch serves up a Mexican Fiesta!

This crunchy, cheesy corn-dip-with-a-kick is a tradition here at Gooseberry Patch. Whether we're having a potluck, picnic, birthday celebration or holiday party, someone always brings Robert's Corn Dip!

Robert's Corn Dip, From 101 Homestyle Favorites cookbook, shared with us by Carole Snodgrass of Rolla, MO

Robert's Corn Dip 
3 11-oz. cans sweet corn & diced peppers, drained
7-oz. can chopped green chiles
6-oz. can chopped jalapenos, drained and liquid added to taste
1/2 c. green onion, chopped
1 c. mayonnaise
1 c. sour cream
1 t. pepper
1/2 t. garlic powder
16-oz. pkg. shredded sharp Cheddar cheese
corn chips 

Mix all ingredients except corn chips together and refrigerate. Serve with corn chips for scooping. Makes about 6 cups.

It appears to be very similar to a cheese dip I LOVE from my favorite local Mexican restaurant, but the addition of corn is different!
I'll be trying this out on the family.
