Super Easy Chicken Lime Fiesta Bowl Recipe

Get it while it's HOT! One-bowl recipes are IN right now! They are easy to make and perfect for quick summer meals. This meal takes 30 minutes to make. I will share the recipe if you do me a HUGE favor? Please don't let my husband know how easy this recipe is to make.

Chicken Lime Fiesta Bowl
Servings 6

Ingredients
1 box of Zatarain's® Cilantro Lime Rice Mix
1 Tbsp butter for rice mix
1 can black beans
4-6 avocados
1 batch Pico de Gallo (my easy recipe) or salsa
1 bunch cilantro
2 limes
2 jalapeños
1 lb. chicken breast
2 cans Rotel Tomatoes (diced tomatoes with chilies)

Directions
1. Cook rice according to the box. It takes 25 minutes so start this first.
-Follow cooking instructions.

2. Next immediately start chicken. Put chicken in a pan with a lid.
-Dump in both cans of Rotel tomatoes with 1/2 cup of water. Let simmer with lid on.
-After 15 minutes turn chicken over. Let cook another 10-15 minutes.
-Then shred chicken and keep in pan with lid on until ready to serve. You keep on low
if done before ready to serve.

3. While food cooking prep rest of ingredients. I put all in separate containers.
-Open can of beans, rinse with water and let drain.
-Coarse chop up avocado. Each serving gets 1 avocado or 1/2 if you prefer.
Only cut what you need for this meal.
-Coarse chop cilantro.
-Cut lime into wedges.
-Coarse chop jalapeños

4. Make Pico de Gallo or use salsa. If you are making mine, make sure to get the
ingredients, too! It is super easy.

5. Put it all together. I love this part of bowl recipes. Everyone can make their own.
Just so you know, the rice & chicken do not need to be hot to serve this. I keep all
ingredients separate and put away in fridge for next meal.

6. Kitchen Tips: Make it quicker by cooking chicken in the Instant Pot.
Same ingredients. Time will be 10-12 minutes. Or I've been known to grab cooked
chicken from the store. Do whatever works for you. Switch up any of the ingredients
that suits your family. No black beans in the pantry but you have refried beans or
great northern? Use them. Make it your way!

ENJOY!

Here are a few other recipes you might enjoy, too!

Paprika Glazed Chicken Recipe

I love the combination of chicken and paprika. My mother-in-law is Hungarian and she has several recipes our family LOVES and we make them over and over using Hungarian paprika.
Take a look at this Paprika Glazed Chicken! I'm totally drooling, aren't you? This recipe uses Pereg Spanish Paprika which I plan on trying out soon. Have you tried Spanish Paprika?

Paprika Glazed Chicken Recipe (Recipe Courtesy The Set Table, Amit Women/Albert Einstein School of Medicine)
Ingredients
One whole chicken cut into eights
1 egg, beaten
Cornflake crumbs
Glaze
4 Tablespoons lemon juice
¼ cup sugar
¼ tsp Pereg Spanish Paprika
¼ tsp Pereg course grind black pepper

Directions
1- Dip chicken into egg, then cornflake crumbs. Place in pan in a single layer.  Bake 30 minutes at 400 F.
2- Pour glaze over chicken. Baste several times and bake 30 minutes more.

Are you going to try this recipe? Please let me know if you do and how much you loved it. What sides did you serve with it?

Pereg, a leading producer of all-natural spices from around the world, offers more than 60 spices and spice blends sourced from the best places on earth. Read up on Paprika! It is a fascinating spice!

Paprika – The fourth most consumed spice in the world, paprika often appears in rubs, marinades, stews, chilies, and as a garnish. It’s a key an ingredient in numerous cuisines, from Mexican rices to classic Hungarian goulash to Italian sausages.
All paprika starts life as a type of red Caspicum annum, otherwise known as the bell pepper. Paprika can be smoked, sweet, hot, Hungarian, or Spanish style, depending on the variety of the peppers used and how they are processed. They range in color from bright red to brown, each with its own flavor profile, from mild to spicy. Along with new Spanish paprika, Pereg Natural Foods offers five other varieties: hot, hot oil, smoked, sweet, and sweet oil paprika types to choose from.
Spanish cuisine being a huge trend these days, you may have come across Spanish paprika on a recipe's ingredient list. Also known as pimentón, this spice is becoming very popular in the United States. But what exactly is Spanish paprika and what makes it so special?
There are two types of Spanish paprika: smoked and non-smoked. Spanish paprika is commonly made with smoked peppers, which brings a deeper, smokier flavor to the table. That earthy essence comes from smoke-drying the peppers with oak wood for two weeks before they are ground.
Whether smoked or non-smoked, Spanish paprika is available in three varieties: sweet (dulce), semi-sweet (agridulce), and spicy (picante). The levels of heat and sweetness vary based on the blend of peppers used. Spanish paprika is generally less intense than Hungarian paprika, so it can be used in a multitude of ways
“Spanish paprika can be your best secret ingredient!” says Joy. “It has just enough spiciness to be interesting, and its array of flavors – from sweet to spicy - gives depth to a variety of recipes. We use it in baked eggs, potato casseroles, sprinkled on roasted tomatoes, and in beef stews. Sometimes we use just a hint — not so much that it defines a dish, but just enough to give it a smoky or sweet note in the background.
It's a great spice for adding flavor and depth to vegetarian and vegan dishes, she says, and to dishes that are light on fat. “It’s a must for everyone’s spice cabinet.” Pereg offer six varieties of paprika in all - find them at www.pereg-gourmet.com.

PBfit Healthy Power Balls with George Washington Carver

February is Black History Month. PBfit is recognizing George Washington Carver and his contributions to the peanut industry. Even though he isn't the direct inventor of peanut butter, he helped establish peanut butter as the nutritious staple ingredient found in 94 percent of American households today! Say what? Isn't that insane? No way would I have guessed 94 percent. If only Mr. Carver could see his impact on our world today.

Read this excerpt from my friends at PBfit:

"Born an African-American slave a year before the practice was outlawed, Carver left home at a young age to pursue education and would eventually earn a master’s degree in agricultural science from Iowa State University. As an agricultural scientist and inventor, he learned that years of growing cotton had depleted the nutrients from soil, resulting in low yields. But by growing nitrogen-fixing plants like peanuts, soybeans and sweet potatoes, the soil could be restored, allowing yield to increase dramatically when the land is reverted to cotton use a few years later. Farmers, of course, loved the high yields of cotton they were now getting from Carver’s crop rotation technique. But the method had an unintended consequence: A surplus of peanuts and other non-cotton products.

In all, he developed more than 300 food, industrial and commercial products from peanuts, including milk, Worcestershire sauce, punches, cooking oils and salad oil, paper, cosmetics, soaps and wood stains. He also experimented with peanut-based medicines, such as antiseptics, laxatives and goiter medications.
In 1921, Carver appeared before the Ways and Means Committee of the U.S. House of Representatives on behalf of the peanut industry, which was seeking tariff protection. He described the wide range of products that could be made from peanuts, which not only earned him a standing ovation but also convinced the committee to approve a high protective tariff for the common legume.
He then became known as “The Peanut Man.”

Succeeding Carver and these other innovators, PBfit is proud to bring peanut butter into the next century so those can enjoy this long-standing pantry pleaser made healthier and in more delicious ways. PBfit is peanut butter powder made with gently pressed roasted peanuts, coconut palm sugar, and a pinch of salt. The result is a delicious, nutritious product that leaves the fat and calories of traditional peanut butter behind. In comparison, it contains 87% less fat and 1/3 the calories.

The versatility of powdered peanut butter adds to the long list of benefits that make PBfit a must have product for every kitchen. Mix with water for that satisfying, creamy peanut butter texture, easily add it to smoothies for a nutrient boost, or use in any recipe where peanut butter is an ingredient.

Experience the next innovation in the peanut butter industry that’s already popular with households. PBfit is the number one selling peanut butter product on Amazon!"

WOW! Thank you Mr. Carver aka "The Peanut Man" and all the others involved in the peanut process the past 100 years.

Have you ever tried PBfit? We LOVE it! Not only is it great for our morning Shakeology but it rocks in other healthy recipes. Below is a recipe for Super Healthy Power Balls. The recipe is from one of our little friends at school. Instead of sandwiches, this little guy brings 3 Kids & adults both love them. Enjoy!

Easy EGGY Tostadas - Healthy Recipe #MakeTime365

Healthy eating at home is one of my specialties! Over the past 4 years I've been on a healthier journey which has included learning to exercise, learning to cook healthier food and sharing this with friends & family. Our home has been transformed from box, processed foods to fresh meat, fruits, veggies and whole grains. It has been a fun journey!

I've been a bit distracted the past year or so and have not shared all of my healthy tips here on my blog! If you've been following me, I've started posting and sharing more. I hope that my post are helpful to you and your family! Follow my social media channels for more healthy ideas. Links are on the right side bar!

Today I'm sharing Healthy, Easy EGGY Tostadas. It is an easy go to meal for breakfast or anytime of the day.

Easy Eggy Tostadas

Ingredients

1-2 soft boiled eggs
Salsa or Pico de Gallo
Whole Jalapeños with Carrots & Onions, can
Fresh Cilantro
Fresh Jalapeños
Tostada

Directions

1- Boil eggs. My tips is to add eggs in a pan, cover with water. Turn heat on medium and set time for 13 minutes. When timer buzzes, take eggs off heat and cover with cold water to cool and peel. Add smashed eggs on top of tostada.

2-Make Pico de Gallo or grab your favorite salsa. Add on top of eggs.

3- Blend the can of jalapeños/carots/onions and add as much as you want on your tostada.

4-Chop fresh jalapeños and cilantro. Add some on top of tostada.

That is it! Simple & easy! This recipe is for one. Easy tostada hold 1-2 eggs.

Do you eat on the 21 Day Fix food plan?

One tostada is a Yellow, 2 eggs is one Red, 1/4 of an avocado is 1 blue, 1/2 green for the salsa/pico/jalapeños. I like eating an entire green so I add extra veggies to my plate and eat it. Need info on the 21 Day Fix then click the link!

Healthier Drink Recipes with 20% Less Guilt #IC #FlightSongResolutions #sponsored

We are almost one month down in 2015. How are all of your new year resolutions going for you? What goals and resolutions did you make this year? Almost everyone I know personally has at least one healthy related resolution which includes exercising more, eating healthier, cutting out soda and dropping 20 or more pounds. Do any of these resolutions sound like some of yours?
I participated in an Influencer Activation on behalf of Influence Central for Brancott Estate Flight Song. I received product samples and a promotional item to thank me for my participation.

I use to be that person who would set a goal to weigh less by the following new year. I would also wish it on my birthday to weigh less the next year. Up to 2012 those resolutions and wishes never came true. As of matter of fact as each year went by, I would be heavier, not lighter. Did this only happen to me? Can anyone else relate? Late winter/early spring of 2012 I set out to live a healthier lifestyle.  I did not set a specific goal or resolution, I just told myself that I will walk off my weight and be healthier by eating not so healthy foods. So from 2012 through today I'm down 100 pounds. I've learned to not have a set number but to continue, day by day to get stronger and healthier.

It feels good to be in the 3rd week of January and not have any broken resolutions. Have you stuck with yours or did you break some? Did you know that after one week, 75% of people have broken their resolutions. This is because resolutions are set, most seem realistic but they aren't if a plan isn't created to keep accountable for actions to reach the set resolutions.

If cutting back calories, even 20% less in every day eating is a goal or a resolution it can be done with a plan. The plan is a lifestyle change that allows you to still be serious about your goals but to remember that you still have to live and enjoy life. With this in mind, Brancott Estate was the first to plant and create the world's first Marlborough Sauvignon Blanc wine with 20% lower in calories without changing the taste or quality. This product has since changed the course of our country's wine industry. By doing this, the Brancott Estate Flight Song wine will allow you to keep your healthy resolutions and have fun doing it!

Would you be willing to try a wine that has 20% less calories than similar selections of Sauvignon Blanc and Pinot Grigio? I was skeptical that a company could create a pleasant wine by cutting out the calories. I do not like to over indulge and drink my calories but for special occasions it is acceptable and especially at a 20% less calorie savings! I took on the challenge and participate in this product sampling of the Brancott Estate Flight Song wines.

I have to say that I was most impressed with the Sauvignon Blanc and Pinot Grigio wines. I knew that they were less calorie but did not tell anyone at our Christmas Day meal. Guess what? No one noticed and everyone liked the wine. It was so refreshing to have a glass of wine or two without the guilt.

I love adding fruit to my wine and had the extra options for my guest. We had blueberries, pomegranates, strawberries, cranberries, mint, basil, and blackberries which could all be added to the glasses of wine. This is perfect for a dinner, night time "wine" down, and even with pre dinner appetizers.

Can you see yourself trying out the Flight Song wines? If you like wine this is a great one to try and will help you keep within your calorie goal for the day. Even if you do indulge, know that you are saving 20% in calories.

{Healthy Recipe} Blueberry Orange Smoothie #IC #LittleChanges #sponsored

Happy New Year! What healthier goals and resolutions have you made for 2015? Are you going to focus on healthier eating? If so do you have a plan? What little changes have you already made this year? For almost 3 years I have been on a healthier lifestyle journey. I have learned over the years that you have to take it step-by-step and not rush change. Change is something that takes time and if you start today, you'll have a lifetime to create a new healthy lifestyle. I participated in an Influencer Activation on behalf of Influence Central for the U.S. Highbush Blueberry Council. I received a stipend to facilitate my purchase for my review as well as a promotional item to thank me for my participation.

One little change that I have made in my healthier lifestyle journey is to eat fruit instead of processed sugar laden foods. One fruit I love would be the delicious, plump, little blueberry that is found year round in my local market. I recently learned that the domestic blueberry season runs from April to September and then they are imported from Chile, Peru and Argentina. We will buy fresh, freeze-dried, and frozen depending on what we are making. These little bush dwelling fruits can be enjoyed by the handful and popped right into the mouth or tossed into a large glass of water.

My little changes have added up to 100 pounds off my body which includes healthy eating and healthy exercises. These changes have been for me and for my family. They also exercise and eat healthy. So yes, they also love blueberries. We snack on them, cook with them and even blend them in with our healthy morning smoothies. They are also enjoy in with whole grain pancakes and waffles.

By adding in more blueberries to our daily meals we have
  • less unwanted calories
  • less processed sugar products
  • 80 natural calories per serving (one cup)
  • daily recommended intake of fiber with 3.6 grams
  • added vitamin C, vitamin K and manganese

21 Day Fix {Healthy Recipe} for Extra Veggie Spaghetti

January is National Soup Month and I have a lot of tasty soups to share with you this month. Today I'm taking a soup break to give you a very healthy extra veggie spaghetti recipe hubby and I created together (something weird is happening to us...we will celebrate 22 years of marriage this year and all of a sudden we are eating healthy together, exercising together and even cooking together.) I posted this yesterday on my personal Facebook page what we were doing in the kitchen and my friends wanted more info. So this recipe is for them and for you!

Hubby and I (our family) are eating clean with the 21 Day Fix. The healthy eating plan has been in our kitchen since October and it is the BOMB!  Not only are we eating foods super clean (means fresh foods, healthy foods and easy prep and cooking) we are also exercising and feeling great. Want in on our secret? Want to know more about the 21 Day Fix then click the link. Message, comment or follow me on Facebook and I can tell you and help you get started with this right away.

Easy & Healthy Extra Veggie Spaghetti

3 servings

Ingredients

3 yellow squash (can substitute)
1 bell pepper (yellow, orange or red), coarse chopped
1 small onion, coarse chopped
1 28 oz. can non salt tomato sauce
1 tsp each of crushed red pepper, tarragon, basil, parsley, oregano, garlic powder
2 tsp minced garlic
1 tsp olive oil with dash of the above spices

Directions

1- In a large sauce pan, bring bell pepper, onion, tomato sauce, minced garlic and the 1 tsp spices to a simmer. Cook for 20-30 minutes.
2- While sauce is cooking, get out the Vegetable Spiralizer and "spiralize" the yellow squash.
3-Right before sauce is done and right before you are ready to eat, add 1 tsp olive oil to a large sauté pan. Once hot, add in the squash. Stir around for 2-3 minutes and add a dash of all the spices to the yellow squash.
4-Add squash noodles to your plate and top with sauce.

Paderno World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable Slicer

Kitchen notes

1-I added in 3 chicken breast, large chunks into my spaghetti sauce to cook.
2-Perfect recipe for the 21 Day Fix healthy eating plan.
3-I personally love making my spaghetti sauce in a crockpot. This can be added in a small crockpot for 2-4 hours on high.
4-I never make a small batch of spaghetti sauce. I quadruple this sauce recipe. I can use it for leftovers or freeze it for a later meal.

Tips on using the Vegetable Spiralizer

  • This is one of the easiest "kitchen gadgets" we own. It takes just a few seconds to add the blade of your choice.
  • Put in your veggie (you might have to cut to size) and spiral away.
  • It was super easy to rinse and clean off. We do not have kitchen space to leave it out so we put it back in the box and store on our extra appliance shelf.
