Avocado Feta Salad Salsa Recipe #iloveavocados #MC #sponsored

We are huge avocado fans in this house! We also love eating Mexican recipes so every time we have any type of Mexican food you can bet there will be avocados. How about you and your family? Do you like avocados? How do you prepare them? 



Most of the time when I prepare an avocado for us to eat, it is just sliced and served with a splash of lemon or lime, garlic and a pinch of salt. That is all we need to enjoy fresh Avocados from Mexico. When I make guacamole, I do the same thing except I smash the avocados with a forth, add same seasoning and a pinch of cumin. At home I do not add sour cream to my guacamole. Sometimes I will add plain greek yogurt if I'm making a layered dip that includes guacamole.

I participated in a campaign on behalf of Mom Central Consulting for Avocados from Mexico. I received a promotional item as a thank you for participating. As part of this campaign I found the Avocados from Mexico Community website. Have you been there? If you like avocados then this is the go-to spot to find other mexican recipes, avocado fans, avocado goodies such as ringtones, wallpapers, recipes and of course an Avocado for Mexico Store!

While browsing around their site, I found that I love the Community Recipes section. I'm a visual learner so when I see photos of recipes, I can easily browse and find something new to make. In the Community I found at least 7 recipes to try and added to my favorites. I love that the recipes can be easily favorite. Besides adding a recipe to your favorites, you can click the ingredients, add to your shopping cart and print! How cool is that? 

I found the site very tasty and user friendly. While looking at the recipes and the Community Blog, I was truly inspired to try some new, for us, out of the box recipes. When I say that I mean try using avocados to make popsicles and brownies! I pretty much have avoided doing this as well as frying avocados. No one in my family has asked for these type of recipes so I haven't tried them. Have you? 

Besides viewing the recipes, I enjoyed watching the Avocado Channel which, again, inspired me to try some new recipes. The Chef's corner is amazing and the pictures are mouth-watering. I'm so excited to have found the Avocado for Mexico Community and plan on checking in frequently! Avocado Feta Salad Salsa

Ingredients

2 plum tomatoes, chopped
1 avocado, halved, seeded, peeled & chopped
1/4 c. finely chopped red onion
1 clove of garlic, minced
1 tablespoon chopped fresh parsley
1 tablespoon snipped fresh oregano
1 tablespoon olive oil
1 tablespoon red or white wine vinegar
4 oz. feta cheese, coarsely crumbled
taco chips

Directions

1-Start at the top of the recipe and as you do and get to each one, toss in a bowl. Once all added give a few good stirs and serve! 

Kitchen Notes
-This one recipe is just the right size dip for 2-4 people. I usually make 4 times the amount for a large crowd! 
-Works great as an appetizer, side dish and even on tacos and nachos!
