Kona Rubbed Strip Loin

Summer is grilling time! What are some of your favorite recipes to grill? Do you grill meat? Veggies? Fruit? I love everything grilled and grill all year long because of my indoor grill. I like the rub recipe which is used on this strip loin. I plan on trying the rub on pork chops and chicken this summer.

Kona Rubbed Strip Loin 

Ingredients

8 - 6 oz New York strip steaks 

Marinade Rub

1 quart Kona coffee, brewed extra strong and chilled
1/4 cup Kona coffee grounds
1/2 cup chipotle peppers
1/4 cup rice wine vinegar
1/8 cup Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract
1 teaspoon Nielsen-Massey Pure Coffee Extract
6 cloves garlic, peeled and chopped
3 shallots, peeled and chopped
4 sprigs of thyme, chopped 
3/4 cup brown sugar
1/2 bunch scallions
1 cup salad oil

Directions

1-Combine all of the solid ingredients of the marinade in a food processor and blend. 
2-Slowly add the coffee and salad oil and blend until all of the ingredients are combined. 
3-Cover the steaks in the marinade and cover with plastic wrap so the marinade covers the entire surface area of the meat. 
4-Marinate for at least 4 hours. 
5-After marinating, remove and dry off the steaks. 
6-Season with salt and pepper, and grill to your desired temperature.

Recipe Rehab Comfort Food Beef Stew Recipes #RecipeRehab #Sponsored #mc #Beef

We have been making comfort foods all fall and winter. This truly has been the longest, coldest winter since living here in Southern Illinois. We've been cooking our favorite comfort foods and are always on the look out for new recipes to cook, too! How about you? Have you been cooking your favorite comfort foods this winter? Have you ever watched the show Recipe Rehab on CBS? If so what do you think about the show? We love how the two chefs take family favorite meals, most of which are high-calorie and not so healthy, and transform them into lower calorie, healthier versions. Once they alter the recipe, the family then makes the two recipes and decide which is their favorite. 

This post is all about trying two of the Recipe Rehab's Certified Angus Beef® brand Beef Stew makeover recipes on my family. We voted for our favorite recipe and the winning recipe will be announced on Saturday February 15th during the award-winning Recipe Rehab show on CBS.

Our family didn't try the original makeover recipe but I do know that a beef stew can rack up the calories, especially fat calories and easily top 1000 calories per serving. 

The two Recipe Rehab recipes where very healthy recipes and ranged from 364-552 calories per serving. That is perfect for a complete comfort food healthy meal. Do you try and cook healthy recipes for your family? Have you ever given a makeover on one of your not so healthy family favorites? There are a lot of ways to overhaul recipes to cut out extra fat and calories. We love what they did with both of the Certified Angus Beef® - Beef Stew recipes.

The two recipes we tried were Beef Stew with Barley and Hearty Beef Stew. Both recipes were enjoyed by my family for different reasons. A few didn't like the mushrooms but they know to pick them out as well as the one person who doesn't like carrots. We loved all of the veggies in the recipes. Everyone LOVED how tender and tasty the beef was to eat in both recipes. 

We loved how tasty, hearty, and healthy the recipes were. Out of the two, my family loved the Beef Stew with Barley the most. We hope you give them a try and see which is your favorite. Check out the links above for more beef recipes!

Beef Stew Recipes


Here is our family favorite Beef Stew with Barley recipe:
Serves 6
Ingredients
  • 2 1/2 pounds Certified Angus Beef ® sirloin tip, cut into 1 1/2-in. chunks
  • 1 pound crimini or button mushrooms, cleaned
  • 2 cups fresh spinach, rough chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1/4 teaspoon or large pinch of kosher salt
  • 2 tablespoons olive oil, divided
  • 1 large onion, diced
  • 1 large carrot, diced
  • 1 stalk celery, diced
  • 1 1/2 cups (or half a bottle) pinot noir
  • 3 cups low sodium beef stock
  • 1 large bay leaf
  • 1/2 cup quick cooking barley
  • 1/2 cup flat leaf parsley, chopped
Instructions
  1. Preheat oven to 450°F.
  2. Add mushrooms, spinach, garlic, tomato paste, thyme and oregano to food processor. Pulse lightly until vegetables are roughly diced and mixture comes together.
  3. Pat cubed meat with a paper towel to absorb excess moisture; this helps beef brown when seared. Season beef with salt. In large Dutch oven or pot on medium-high heat, add one tbsp. olive oil. Working in batches so as not to crowd the pot, brown beef a few minutes on each side. With slotted spoon, remove browned beef and reserve.
  4. Add remaining olive oil to Dutch oven, and then the diced onion, carrots and celery. Sauté for 5 minutes. Turn heat down to medium and add mushroom mixture, mixing well with wooden spoon. Place meat back in pan; then add the wine and stock (liquid should cover meat and vegetables). Add bay leaf, cover pot and place in lower part of the oven. Cook for 40 minutes.
  5. While beef is stewing, add barley and 2 cups water to a medium pot. Bring barley and water to a boil; lower heat and simmer 10 minutes or until tender. Strain any excess liquid.
  6. After 40 minutes, remove pot from oven and stir cooked barley into stew. Return pot to oven so stew can continue to cook 10 more minutes, or if time permits, up to an hour. The longer stew cooks, the more tender the beef will become.
  7. Serve stew in a shallow bowl and garnish with freshly chopped parsley.

Certified Angus Beef Recipes


Hearty Beef Stew
Serves 8
Ingredients
  • 2 1/2 pounds Certified Angus Beef ® sirloin tip, trimmed of excess fat, cut in 3/4 – 1-in. cubes, and patted dry on paper towels
  • 1/3 cup all purpose flour
  • 5 cups no-salt-added beef broth
  • Canola oil spray
  • 1 pound yellow onions, diced in 3/4-in. pieces
  • 1 pound baby carrots
  • 6 ounces fresh shiitake mushrooms, stems removed and quartered
  • 1 cup dry white wine (sauvignon blanc or pinot grigio)
  • 6 celery stalks, cut into 3/4-in. pieces
  • 6 cloves garlic, minced
  • 3 ounces tomato paste
  • 2 teaspoons fresh thyme leaves, minced (or 1 tsp. dried)
  • 2 bay leaves
  • 1 teaspoon ground black pepper
  • 1 teaspoon fresh lemon juice
  • 1 pound cauliflower, cut into florets
  • 8 ounces fat free sour cream
  • 8 pinch fleur de sel
Instructions
  1. In 2-quart mixing bowl, whisk flour and beef broth together until any lumps are gone.
  2. Spray pot or Dutch oven (6-quart) with oil and place on medium-high heat. When pot is heated, brown beef in three batches, adding more spray for each batch. Do not overcrowd pot; its bottom should be visible.
  3. Spray nonstick sauté pan with oil and heat on medium high. Add onions and cook, stirring occasionally, until brown and soft. Remove from pan and reserve; repeat with carrots, cooking until browned.
  4. Once beef is browned, add mushrooms to Dutch oven and cook for 1 minute. Add wine; cook until reduced by half, about 3 minutes.
  5. Return browned beef to Dutch oven; add caramelized onions and carrots, as well as celery, garlic, tomato paste, thyme leaves, bay leaves and ground pepper. Stir in flour and beef stock mixture.
  6. Bring pot to a simmer, then reduce to low heat and cook for 45 minutes, or up to 2 hours if time permits. (The longer the stew simmers, the more tender the beef will become.) While stew is simmering, occasionally check it and skim any excess fat from the top.
  7. Bring 4 quarts water to a simmer in large pot. Place cauliflower florets in simmering water and cook 8 minutes or until tender. Drain and keep cauliflower warm.
  8. Remove stew from heat and stir in lemon juice. Divide cauliflower equally among 8 bowls, then ladle stew over cauliflower. Garnish each bowl with a dollop of sour cream and sprinkle with small pinch of fleur de sel.

Recipe Rehab Beef Stew

We found that using Certified Angus Beef ® made a huge taste difference in both the recipes. The meat was tender, flavorful and didn't dry out being baked or cooked on the stove top. Some ingredients can't be replaced or shouldn't be replace in a recipe. If you have any questions on what you should cut out let me know in the comments and I'll try and help!

New Orleans Quick Jambalaya Recipe

We lived in New Orleans for just over 5 years until Hurricane Katrina ushered us out. Sad times but no matter what the hurricane did it could not take away all the fun memories, new recipes I learned to cook and long lasting friendships that were made. We do look upon our time there a tasty one because of all the yummy New Orleans food (click link to get more New Orleans Recipes.) Not only did we have our favorite hole-in-the-wall places to eat but I learned to cook from some of the best ladies! 

One dish that is at every pot luck and served on a regular basis is Jambalaya. I have some made from scratch recipes but honestly my favorite is from New Orleans very own Zatarain's brand Jambalaya Mix. The recipe below take the mix and fixes it up just like a made from scratch mix. This helps me because I can't readily get some of the made from scratch ingredients here in Southern Illinois. Enjoy our go-to New Orleans Quick Jambalaya.

Zatarain's New Orleans Style Jambalaya Mix, 8-Ounce Boxes (Pack of 12)
Quick Jambalaya- If you are wanting to make a yummy quick Jambalaya buy a package of Zatarain's New Orleans Jambalaya Mix. You can't go wrong with this kit.  

Follow directions on the box. I add in 

1 large onion, diced
6 cloves of garlic, coarse chopped
6 stalks celery, coarse chopped
1 green pepper, coarse chopped
1 1/2 lbs of shrimp, chicken, ham and/or sausage

Cook as directed on box.

Kitchen Note: Andouille sausage is the preferred choice of sausage. We can't always get it so I just make sure it is some sort of spicy sausage. 
Serve with french bread and butter. Yum.

Each Fall and Winter I find myself using the crockpot more and more! How about you? Crockpot or Slow Cooker cooking saves a lot of dinner time hassle and it is a great way to have a meal on the table after a long day at work. Dinner Time Busy Day Lasagna

Do you have a go-to meal that you can always count on? It is good to have several of those family favorite dinner time recipe to make on a whim. This busy day lasagna is one of those recipes. It is a tried and true family recipe which I got from Rush-Hour Recipes by Gooseberry Patch Cookbooks. It is one of those quick and easy meals you can put together in the morning and then toss in the oven and bake for dinner. 

Busy-Day Lasagna
*I served this for guest and they loved it. It really was quick and easy. I made it 6 hours ahead of time and baked it 1 hour before serving.

Ingredients
2 c. shredded mozzarella cheese
1-1 1/2 c shredded Parmesan cheese
2- 26 oz jars favorite pasta sauce, divided
2- 25 oz pkgs frozen sausage & cheese ravioli, divided
12 oz pkg frozen spinach, thawed, drained & divided

Directions
Combine cheeses in a bowl; set aside. 
Spread a layer of sauce in a lightly greased 13x9 baking pan. 
Arrange a layer of ravioli on top of sauce. 
Spread a layer of spinach on top. 
Add a layer of cheese mixture, completely covering with spinach. 
Spoon some sauce over cheese. 
Repeat all the layers, ending with a layer of cheese. 
Bake, uncovered, at 350 degrees for 20-25 minutes, until cheese is melted and sauce has reduced a little. 
Let stand 5 to 10 minutes before cutting into squares. Makes 8-12 servings.

Kitchen Notes
I used only cheese ravioli and my own ground sausage, cooked and layered with the ravioli. The only problem I had with this recipe is that at 25 minutes the cheese was not melted and the sauce wasn't bubbly. So I kicked the stove up to 400 and it was done in 15 minutes. Next time I will just cook it at 400.

      {Six Sisters STUFF} Slow Cooker Pot Roast Sliders

      Six Sisters STUFF makes the easiest, family friendly recipes! This recipe can be found on their website and in their new cookbook which is featured here on my blog.

      Slow Cooker Pot Roast Sliders 
      (Six Sisters' Stuff cookbook)

      *My adapted recipe makes this with chicken or roast beef. The below spice mixture works with either meat and differs from Six Sisters' Stuff. 

      Ingredients

      1 3-4 lb beef roast
      1 cup water
      1 cup salsa
      1 envelope onion soup mix
      1 envelope au jus mix
      12 dinner rolls or other slider rolls
      Sliced Swiss cheese - 1 piece per slider
      Creamy Chipotle Sauce

      Whisk together water; salsa and seasoning packets. Place roast in slow cooker. Pour seasoning mixture over roast. Cook on low 8 to 10 hours, or high 4-5 hours. Shred beef. Cut each roll in half and place on a baking sheet. Place a slice of Swiss cheese on the bottom half of each roll. Place baking sheet in oven with broiler on low. Broil 1-2 minutes or until edges of the rolls ar golden and cheese has melted. (Be sure to watch them closely so they don't burn!) Remove baking sheet from oven.

      Place a spoonful of shredded beef on the bottom half of the tasted roll. Spread Creamy Chipotle sauce on the top half.

      Makes 12 sliders.

      Kitchen Note: These are a tad messy! If you need to cut your sodium then use 1 container of dry onions in the seasoning aisle instead of the onion soup mix with same results and less salt. I made with same recipe using chicken and a few variations. Click over to the Crockpot Chicken Sliders for that recipe.

Besides all of the easy-to-make tasty recipes, the book is full of crafts and homemaking ideas which encourage families to create memories together. This book would make a perfect gift for any new bride, new mom, daughter headed off to college as well as a sweet birthday gift for a girl friend.

      I loved all of the photos. Just like on their blog, Six Sisters' STUFF, the photos rock each recipe. Everything is drool worthy! This cookbook is innovative because it truly connects their website to this cookbook. I've seen quite a few of the recipes and crafts on their website which gives me comfort because I know that their ideas work! I love how they have QR Codes sprinkled throughout the book to link ideas right back to their website. That is brilliant!

      {Coffee Recipe} Cafe Pergolesi Espresso Steak Rub Recipe

      I love coffee! Yes coffee drinks, coffee decor, coffee desserts, coffee coffee coffee! One of my favorite online coffee places is Big City Coffee. They have wonderful beans and I love all of their products. The owner is fun and friendly, too! They provided the below coffee recipe which is a coffee rub for meat. How can you go wrong with coffee and meat? What are some of your favorite coffee recipe?

      Cafe Pergolesi Espresso Steak Rub Recipe
      Ingredients:
      1/2 cup ground sweet ancho chile or chile powder
      1/4 cup Cafe Pergolesi ground espresso
      4 Tablespoons hot smoked Spanish paprika
      3 Tablespoons brown sugar
      1 Tablespoon dry yellow mustard powder
      1 Tablespoon salt
      2 Tablespoons freshly ground black pepper
      1 Tablespoon powdered ginger
      2 teaspoons Chipotle chile powder
      Makes about 1 1/2 cups

      Preparation Instructions:
      Mix all up and store in an airtight container.
      Tips:
      Keep for use on grilling steaks and other meats.
      Apply liberally to one side only, put this side down first.
      You can grill on an open fire or on a griddle indoors.
      If using 1″ steaks, about 4-5 minutes on each side will give you a medium rare steak.

      *I like to put a half teaspoon of herb butter on top of steak when serving.
      *Another suggestion is to mix a few tablespoons of this rub into about 1/2 stick of butter, and my favorite idea – add some chocolate powder
