Veggie Fried Rice Recipe with Gooseberry Patch

Here is a yummy fried rice recipe from Homestyle in a Hurry by Gooseberry Patch.

Veggie "Fried" Rice

Ingredients
1 1/2 c. long-cooking rice, uncooked
1/2 c. carrots, peeled and finely diced
1/2 c. celery, finely diced
1/2 c. onion, finely diced
3 c. water
1 t. salt (or use beef or chicken bouillon)

Directions
Place all ingredients in a heavy saucepan over medium heat.  Bring to a boil.  Cover and boil gently about 15 minutes, until rice is tender and water is absorbed.  Serves 4.

*My tips: We tossed in chopped green onions before serving!  This was a tasty alternative to actually frying the rice like I normally do.

  1. I generally have to make my own fried rice, as most places that I can buy it at have peas in it, and I am allergic to them!
    This sounds much easier than how I usually do it! After the rice cools I add a bit of oyster (flavoured) sauce, and a tiny bit of soya sauce, and then fry it! I will definitely be trying this.
