Kid Approved Summer Meals and Menu Plan

Happy Menu Plan Monday! I hope that you are enjoying your summer. It is flying by and school is starting for the 2 college girls and high school sophomore in less than 1 month. We have a lot going on from now until then. When does school start for your family? Here is an easy menu plan all with Kid Approved meals for you to follow or get ideas from this week. Even though summer is crazy, it is helpful to do summer menu planning. These are some of our family favorites and requested over and over! 
Monday- Breakfast Break of Day Berry Parfait 




Tuesday- Thai Basil Fried Rice and rotisserie chicken (use that leftover carcass and make some chicken stock and freeze for a future meal) for our local store. This is the most requested Thai recipe that I make. My kids love it.

Wednesday-Aunt Salad and leftover chicken- great way to get the kids to eat veggies. My kids have always loved this one! 

Thursday-Honolulu Burgers and Skinny Spinach Strawberry Salad- This is one of those unexpected burgers that you might not think of making for the kids BUT mine love it. If the pineapple is too much for the kids, serve it on the side. We always tell our girls to take a bite and try something new. You could always go that route and if they don't like it on their burger they can take it off.

Friday- Asian Chicken Salad with Cilantro Lime Dressing- Another popular family recipe. My teens request this all the time. It has been on our menu several times this summer and we haven't made it. You can use leftover chicken on this one or again do a quick chicken pick up from your local store.

Weekend- Crazy weekend planned! I need to make some Dessert Recipes and one of them will be these Skinny Cupcakes. Kids love these and they are a tad lower in calories so with less guilt!

Featured Menu of the Week from last weeks menu plan- Blogger Becky in the Kitchen had an awesome menu and I want/will make everything on it. I was drooling over this Teriyaki Pineapple Fried Rice on her menu. My kids LOVE pineapple fried rice from our local Thai Restaurant and I can't wait to make this one!
