The Greek salad looks really great. One of our favorite summer salads is:
Lemon pepper beef salad. It is a recipe me and my daughter came up with, one year after a huge grilling party. We had lots of left over steak and corn on the cob. So the next day, we threw together these ingredients and now it is one of our favorites.
Lemon Pepper Beef salad -----------------------
Butter head and tender romaine leaves torn into bite size pieces. add to a sautee pan slice thinly left over steak and corn kernels that have been cut from grilled corn cobs. Heat through just enough to take chill off. In a small bowl whisky juice from 2 lemons (ours are pretty small so 1 large should work) 1 tablespoon of light virgin olive oil, sea salt and fresh cracked pepper. Wisk till to get a nice creamy consistancy. Assemble salad to your liking. We use grilled green tomatoes, thinly sliced red onion, olives and blue cheese crumbles. This salad is awesome!

I agree! They all look delicious but the greek salad is speaking to me!
