Crunchy Biscuit Chicken by Gooseberry Patch

  Crunchy Biscuit Chicken

Mary Makulec of Rockford, Illinois shared this stick-to-your-ribs recipe. She writes, "Chicken, beans, cheese and biscuits...what more could you want?" We couldn't agree more!

2 c. boneless, skinless chicken,
       cooked and cubed
10-3/4 oz. can cream of chicken soup
1 c. canned green beans, undrained
1 c. Cheddar cheese, shredded
1/4 c. canned mushrooms, undrained
1/2 c. mayonnaise-type salad dressing
1 t. lemon juice
10-oz. tube refrigerated flaky biscuits
1 to 2 T. margarine, melted
1/4 c. Cheddar cheese croutons, crushed

In a medium saucepan, combine chicken, soup, green beans, cheese, mushrooms, salad dressing and lemon juice; heat until hot and bubbly. Pour hot chicken mixture into an ungreased 13"x9" baking dish. Separate biscuit dough into 10 biscuits. Arrange biscuits over chicken mixture. Brush each biscuit with margarine; sprinkle with croutons. Bake at 375 degrees for 25 to 30 minutes or until deep, golden brown. Makes 4 to 6 servings.

Fried Okra Salad

Ingredients

2 lb pkg. frozen breaded okra (or use your own okra recipe)
10 slices of bacon, crisply cooked and crumbled
6 plum tomatoes, chopped
1 bunch green onions, chopped
1/2 c. olive oil
1/4 c. sugar
2 T. vinegar

Directions

Fry okra as directed, drain. Combine okra, bacon, tomatoes, and green onions; set aside. Mix together remaining ingredients; pour dressing over okra mixture. Serve immediately. Serves 8.

My Kitchen Notes
This  has to be one of the tastiest salads that I made this summer. It was a huge hit with everyone in my family and I can't wait to make it again. It will always be on my recipe list of salads.

I do not like to crumble bacon after it is cooked so I cut my bacon into pieces with kitchen scissors before frying. For the vinegar, I use balsamic vinegar which went perfect with the salad. No other changes were needed. You do need to eat this once you pour on the dressing. It is not as good the next day because the okra is no longer crispy. So plan on eating all of it!

Thanks to Gooseberry Patch and Oxmoor House for providing the cookbook for my early book review. My own tasty opinions are expressed here!

Gazpacho Dip Recipe

Have you ever made a Gazpacho dip? I have never made it so I picked this appetizer recipe - Vickie's Gazpacho Dip from the newest Gooseberry Patch Cookbook, Big Book of Home Cooking to try on my family. Guess what? Everyone loved it!

Do you even know what this dish is about? I found out that it goes back to ancient times and it involved vinegar, oil, stale bread and vegetables. Some eat it as a cold vegetable soup in the summer while others serve it as a dip.

This recipe is a dip and is it ever tasty!

Vickie's Gazpacho Dip

Ingredients

3 tomatoes, diced
3 avocados, peeled, pitted and diced
4 green onions, thinly sliced
4.5 oz can diced green chiles, undrained
3 tablespoons olive oil
1 1/2 teaspoons cider vinegar
1 teaspoon garlic salt
1/2 teaspoon salt
1/4 teaspoon pepper

Directions

Combine tomatoes, avocados, onions and chilies in a large bowl; set aside; Whisk together olive oil and remaining ingredients; drizzle over vegetables and toss well. Cover and chill. Makes 5 cups. Serve multicolored tortilla chips with this Tex-Mex dip to make it even more festive.

I served this appetizer with Easy Cheesy Enchiladas and it was a HUGE hit. We now have 2 more new family favorite recipes thanks to this cookbook.

Easy Cheesy Enchiladas

Yum-eeee-ooo! I found a very tasty enchilada recipe to make for my family. This recipe came from the Gooseberry Patch Big Book of Home Cooking cookbook! It is brand spankin' new and will be released for sale on 9/20/11. Have you ever made enchiladas? Do you have a recipe to share? Feel free to leave it as a comment.

Easy Cheesy Enchiladas (click to print)

Ingredients

3 lbs. ground beef
2 pkgs. taco seasoning mix
1 cup water
16 oz can refried beans
2 pkgs. 10 inch flour tortillas
1 can cream of mushroom soup
1 can cream of chicken soup
2- 10oz cans diced tomatoes with green chiles
1 1/2 lbs. pasteurized process cheese spread, cubed

Directions

Brown ground beef in a large skillet over med. heat; drain; Add seasoning mix and water; simmer for 5 minutes; Add beans; cook 5 more min. Spread mixture down center of tortillas; roll up. Arrange seam-side down in 2 lightly greased 13 x 9 baking pans; set aside. Combine remaining ingredients in a medium saucepan. Cook over med. heat until cheese is melted; spoon over enchiladas. Cover tightly with aluminum foil and freeze, or bake, covered, at 350 degrees for 15 minutes, until bubbly. Serves 12-16.

Kitchen Notes

I made this according to the directions. I did substitute ground beef for ground turkey and I added in 2 tablespoons of shredded cheese into each enchilada. My husband said that these were burritos, not enchiladas because they were made with flour tortilla shells. Did you know that? He said that they can only be called an enchilada if they are made with corn shells. Oh well :) Either way he at them.

I don't know about you but whenever I get a new Gooseberry Patch Cookbook I always sit down in a comfy chair armed with a package of post-it note tabs. I start tabbing items that I must try first. This book, as you can see by the tabs, is so full of recipes I had to restrain myself from marking every other page. I had to remove some of the tabs to narrow down what I planned on cooking first.

Here are a few of the recipes that I will be trying out, sharing pictures, the recipes as well as offering a copy of this BIG book as a giveaway.

*Fried Okra Salad (OH MY GOSH)
*Russian Beef Borscht (come on cold weather...bring it on!)
*Easy Cheesy Enchiladas
*Vickie's Gazpacho Dip (Yes the Gooseberry Patch Vickie)
*Healthy Hummus
*Spiced Chocolate Coffee

It was NOT easy to narrow down which recipes to make first. The ones picked are perfect for my up and coming meal plans and events. There are plenty more to come.
