Cheesy Super Bowl Dip for Game Day

I openly admit that our family favorite part of a football game is the game day food! Yes even for hubby. If there is good food and friends we will be there no matter who is playing! We love tasty appetizers and even dinner time recipes for game day eating events. Try this super bowl dip as it is one of our favorites!

One of our favorite parts of this recipe is the bacon! We are suckers for bacon recipes! Have fun with this one and substitute ingredients to use what you have on hand! 



Cheesy Super Bowl Dip

Dip ingredients

8 oz Colby jack cheese, shredded
16 oz crisp, fresh bacon bits
1 c. Parmesan cheese, shredded or grated
1 1/2 c. mayonnaise
1/2 c. chopped onion
cloves garlic, minced
1 round loaf bread (20-26 oz) (I use Hawaiian Round Bread loaf)

Topping Ingredients

1 bag Seneca Onions or french fried onions
1/2 pkg Ranch Dressing mix
1 T. dry chives
1 T. Oil (I use EVOL)

Directions

Fry bacon into crisp bits. Shred/grate cheese. Chop onion and mince garlic. Hollow out bread, reserving torn pieces. (Cut into the bread making the top crust cut to look like a football.)

Mix together bacon, cheeses, mayo, onion and garlic. Spoon into bread. Place on an ungreased baking sheet and bake 350 degrees for 45 min without the top! After about 20 minutes I lightly cover the bread bowl with foil. This will let the dip continue to get warm and melty and prevent the bowl from getting too dark.  

While baking, prepare topping. Cut open the Seneca Onions bag and pour in 1/2 pkg Ranch Dressing mix, chives and oil. Close bag and shake! When dip is finished, pull out of oven and top with 1/2 bag of onions (reserve the rest as a side to snack on or add on top of the dip half way through)

Kitchen Notes
For fun I lightly put the football cut out on top of the dip and used Seneca Onions as the pig skin laces! You can also wrap the bowl in some foil to give it some insulation to keep warm if not serving the dip right away.

Serve with the torn bread, apples and pretzels.

Serves 4-6 hungry football fans.

New Dallas & J.R. on TNT burnt my bacon

I grew up as a kid in the 80s watching Dallas. Over the past year I rewatched the entire series and could not believe that I, as a kid, watched the show. A few months ago I heard the New Dallas buzz and was counting down the week, then days to hours and minutes to catch the new series.

What do I think of the new series? I hate to admit it but I LOVE it! Just last week I was wondering about Pam and then she was mentioned in the show.  What do you think is up with that? She just disappeared? I'm not happy with that explanation and I sure hope we learn more.

Anyhow I was so engrossed in the show that I burnt my bacon. Darn you new Dallas and J.R. for making me do this! I never burn food and of course I never want my bacon burnt.

Steakhouse Salad with Bacon, Tomatoes, and Blue Cheese

This Steakhouse Salad makes 6 dinner salads. We love it. Very yummy! I've had this recipe in a few steakhouse but never made it at home, until now! It is the best summer salad that everyone loves.




Steakhouse Salad with Bacon, Tomatoes, and Blue Cheese

For the Chunky Blue Cheese Dressing:
1/2 cup mayonnaise
1 tablespoon minced yellow onion
1/2 teaspoon minced garlic
1/4 cup sour cream
1/2 tablespoon freshly squeezed lemon juice
1 tablespoon white wine vinegar 
1/2 cup crumbled blue cheese (preferably Maytag)
3 tablespoons reduced-fat buttermilk
Kosher salt and freshly ground pepper 

For the salad:
1 bag (3 pack) Romaine Hearts 
2 large tomatoes, diced
1 red onion, finely diced
1/2 pound bacon (about 10 slices), cooked, drained on paper towels, and crumbled
1 1/4 cups crumbled blue cheese (preferably Maytag)
Freshly ground black pepper

For the Chunky Blue Cheese Dressing:
In a small bowl whisk the mayonnaise, onion, garlic, sour cream, lemon juice, vinegar, blue cheese, and buttermilk together. Season with salt and pepper to taste. 

For the salad:
Cut the heads of Romaine in half lengthwise. Place one wedge on each plate. Generously drizzle with the dressing. Top with the tomatoes, red onion, and bacon. Garnish with the freshly ground pepper. Serve immediately.

Tips: There is no substitute for freshly cooked bacon. Use either the traditional pork or turkey variety; but avoid the temptation to use processed bacon bits. 

For a lighter version, substitute balsamic vinaigrette for the chunky blue cheese dressing.

This recipe came from the cookbook, Simply Salads by Jennifer Chandler. I've had the book for a few years now and it is one of my go-to books for quick and easy salad recipes.

Bacon Horseradish Dip

Whether you enjoy it alongside your breakfast, on your sandwich at lunch, wrapped around your dinner or sprinkled on top of just about anything, BACON makes everything better, doesn't it?

Here's a warm dip recipe to inspire you from 101 Easy Entertaining Recipes...
taken along to any get-together or party, it's sure to be a hit! 

Bacon-Horseradish Dip

3 8-oz. pkgs. cream
    cheese, softened

12-oz. pkg. shredded
    Cheddar cheese

1 c. half-and-half
1/3 c. green onion, chopped
3 cloves garlic, minced
3 T. prepared horseradish
1 T. Worcestershire sauce
1/2 t. pepper
12 slices bacon, crisply cooked
    and crumbled

bagel chips or assorted crackers

Combine all ingredients except bacon and chips or crackers in a slow cooker. Cover and cook on low setting for 4 to 5 hours, or on high setting for 2 to 2-1/2 hours, stirring once halfway through. Just before serving, stir in bacon. Serve with bagel chips or crackers. Makes 7 to 8 cups.

Bacon Mondays! Fo' Sizzle Bacon Muffins Recipe

Happy Bacon Monday! Fo' Sizzle!

Why Bacon and why Monday? Last year The God Whisperers came up with  "Rules of Lent by The God Whisperers"  (Listen to Episode 132) on their "radio show podcast."  They are friends of my family and because of their wild and popular podcast & Facebook these rules of Lent began spreading around other like-minded adults and kids! So friends all over the place started celebrating bacon on Mondays!  It has all been in fun.  So if you want to hear more from the God Whisperers click on their link and listen to their show. 

So from there I decided to blog about Bacon Monday and share some recipes that I have made or tried from other recipes!  I've been able to score some giveaways to go along with my Bacon Monday!

This week, the recipe is one that I made a few months ago while going through a Gooseberry Patch Cookbook.  I tried a recipe for Sausage Muffins and from there Bacon Muffins were born and are they ever tasty!  They aren't sweet and are perfect for a grab-and-go breakfast.  These are easy to make.  We made them and froze them in individual baggies so that one could be pulled out at a time!  They just take a quick zap in the microwave and are easy to eat on the run.

If you want a sweet bacon muffin, you'll have to check out last week's Bacon and Butterscotch Breakfast Muffins!  They were ranked #2 in the Top 10 Best Bacon Breakfast Recipes by the Republic of Bacon!

Bacon Muffins

Ingredients

3/4 lb bacon, browned, drained and crumbled
3 c. biscuit baking mix
1 1/2 c. shredded Cheddar cheese
10-3/4 oz can Cheddar cheese soup
3/4 c. water

Directions

Combine bacon, baking mix and cheese in a large bowl; make a well in center of mixture.  Stir together soup and water; add to sausage mixture, stirring just until combined.  Spoon into lightly greased muffin cups, filling to top of cups.  Bake at 375 degrees for 20-25 minutes, until lightly golden.  Serve warm.  Makes 16 muffins.

*Hints: The bacon can be substituted with any meat.  The original recipe was for sausage.  You can easily use bacon, sausage, ham, cheese of any kind, veggies, etc.  Play with it and see what you come up with! We topped each muffin, before baking with whatever was inside so we could identify the muffin.  This is a super recipe if you need to bring a breakfast dish or cooking for a crowd.  We froze our extra in individual freezer bags so one at a time could be pulled out and warmed up in the microwave.

Bacon Mondays! Fo' Sizzle Bacon Brownie Recipe

This week we are featuring Bacon Brownies. YUCK? Heck no! YUM! These are the most perfect salty, sweet & chocolate treat ever! My kids love this bacon recipe and they are a huge hit at potlucks! Make this dessert recipe for your next event! 

I think that I need to post something bacon every Monday! lol 

Bacon Brownies- sizzlin' quick

Ingredients

1 brownie mix
1/2 lb. bacon, cooked

Directions

1) Fry 1/2 lb of bacon and cut/crumble when cool.
2) Mix up a brownie box mix or your favorite homemade recipe.
3) Toss in half of the crumbled bacon, mix in and pour in pan.
4)  Top off with rest of bacon.
5) Bake as directed.
6) Eat!

My take on the cookbook: I agree 100% that bacon is NOT just for breakfast anymore! This cookbook is bursting at the pork belly with  sweet, salty and savory bacon recipes.  The photos are mouth-watering!   Here is the chapter break down and  a few of the recipes that are on our "must try" list.

*Make Your Own Bacon: Joking right? I would have never thought of doing such a thing! Apparently once you make your own bacon you NEVER go back to anything store bought.  So if you have access to a Pork Belly this chapter is for you!  Tasty recipes include Spicy Braised Bacon and Soy-Ginger Braised Bacon!

*Brunch: I love brunch. It is my favorite meal.  I LOVE the recipes for Bakon Mary Cocktail (now that will make any brunch classy), Savory Bacon Bread Pudding AND how about this one pork lovers, Bacon, Asparagus, and Gruyere Quiche.  Ok, so real men don't eat quiche, as my husband likes to remind me...WELL then good more for me and my friends!  I think momma needs this quiche with a side gallon of Bakon Mary Cocktail.  Thank you very much!

*Small Bites: Such a cute name for a chapter.  The recipes are not only CUTE but extremely mouth-watering! Must tries in this chapter are the Adulterated Accordion Potatoes, Cocktail BLTs, Kobe Beef and Bacon Sliders and Bacon-wrapped Parmigiano-Stuffed Dates.

*Soups, Salads, and Side:  Must try tasty recipes include the Egg Chowder with Bacon and New Potatoes, Grilled Bacon with Cucumber Salad with Chili Caramel Dressing and Bacon-Pineapple Fried Orzo (this recipe is on the menu for next week.)

*Pasta- Of course there just HAS to be a pasta chapter! The ever-so-tasty Spaghetti Carbonara is included with new creations of Bucatini with Amatriciana Sauce, Bacon Mac and Cheese and Pasta with Brussels Sprouts, Cauliflower, Hazelnuts, and Bacon! *Meat-Yes a specific meat chapter is necessary.  Top of the food chain is Tacos Al Pastor, Smoked Bacon Tempura with Grilled Corn Salad and Higado de Res Especial (you figure that one out.)

*Desserts- Duh! Bacon and sweets go together like bread and butter!  Must try recipes are the BaCorn (Bacon-Caramel Popcorn with Chile-Spiked Peanuts), Chocolate-Bacon Cupcakes and Pig Candy Ice Cream.

Brown Butter Cereal Bars with Candied Bacon
1 lb bacon
3/4 cup packed brown sugar
3/4 cup butter (no substitutions)
1 1/2 bags (10 oz each) marshmallows
1/2 teaspoon pure vanilla extract
1/4 teaspoon coarse Kosher salt
6 cups rice Chex® cereal
6 cups corn Chex® cereal

Heat oven to 400°F. Line broiler pan or 10x15 pan with parchment paper or foil. Place bacon on pan in single layer. Sprinkle with half of the brown sugar. Bake 9 to 11 minutes until the sugar is dissolved. Turn bacon over, sprinkle with remaining brown sugar. Bake an additional 10 minutes or until bacon is crisp and sugar is melted. Set aside to cool, finely chop.

In 5 quart dutch oven melt butter on medium heat, stirring frequently until it turns golden brown and begins to smell nutty. Add in marshmallows, stir until melted. Remove from heat. Stir in vanilla, salt and finely chopped candied bacon until well incorporate. Gently stir in cereal, until well coated.
Spoon into 13x9-inch glass baking dish sprayed with cooking spray. Wet your hands slightly with water and press the mixture evenly into the pan. Cool completely, about 1 hour. Cut into small (1-inch) bite sized pieces.
