Peanut Butter Cake Dessert Recipe

If you need a quick, easy homemade dessert this is it! My teen made this Peanut Butter Pan Cake from the Meals in Minutes Gooseberry Patch Cookbook. Most of the ingredients you will have on hand if not all of them. Some people think that a box mix is quick, which it is, but if you are wanting something just as quick that is homemade this is the cake. I really only takes a few minutes to add the ingredients together and bake. Give this dessert recipe a try!


Peanut Butter Pan Cake

Ingredients

3 c. all purpose flour
2 c. sugar
2 t. baking soda
1 t. salt
1/4 c. baking cocoa
2 t. vanilla extract
3/4 c. oil
2 T. vinegar
2 c. water


Directions

Combine flour, sugar, baking soda, salt and baking cocoa in a large bowl; mix well. Add vanilla, oil and vinegar; stir in water, mixing well. Spread into a lightly greased 13"x9" baking pan; bake at 350 degrees for 35 min. Spread Peanut Butter Frosting on cake when cool. Makes 15.

Peanut Butter Frosting


Ingredients2 c. powdered sugar
1 c. shortening
1 1/2 t. vanilla extract
1/2-3/4 c. milk
1 c. creamy peanut butter (WE USED CRUNCHY)


DirectionsCombine sugar, shortening and vanilla until smooth and creamy, adding enough milk to reach desired spreading consistency. Stir in peanut butter; mix well.

{Spring Recipe} Prosecco Cake

Add a little zing to your spring parties with this spring recipe. How do you do it? Try adding some Prosecco or sparkling wine to your holiday recipes!

Total Time: 60min | Cook Time: 45min | Level: Easy

Ingredients

1 (16-ounce) box pound cake mix
2 eggs
½ stick butter, softened
1 teaspoon orange zest
⅓ cup Stellina di Notte® Prosecco or sparkling wine
⅓ cup orange juice
1½ cups confectioners’ sugar
¼ cup sparkling wine

Directions

Preheat oven to 350°F. Spray two 9 × 5-inch loaf pans with nonstick cooking spray and dust lightly with flour.
In a large mixing bowl, combine all ingredients for cake. Mix on medium speed until well incorporated. Pour into prepared loaf pans. Bake for 40 to 50 minutes or until top is golden brown. Allow to cool for 5 minutes then remove from pans and cool completely on a wire rack placed on a sheet pan.

To make glaze, put confectioners’ sugar in a large bowl and slowly beat in the Prosecco until consistency is thick but pourable. Pour glaze over top of cakes and allow to drip down sides. Let sit for 5 minutes to set.

Sour Cream Pumpkin Bundt Cake

SOUR CREAM PUMPKIN BUNDT CAKE

A surprise filling of brown sugar streusel makes this pumpkin-flavored cake a special treat. Save a bit of icing for drizzling over each serving of this wonderful cake!
Streusel
  • ½ cup packed brown sugar
  • 1 tsp. ground cinnamon
  • ¼ tsp. ground allspice
  • 2 tsp. butter
Combine brown sugar, cinnamon and allspice in small bowl. Cut in butter with pastry blender or two knives until mixture is crumble.
Cake
  • 3 cups all-purpose flour
  • 1 Tbsp. ground cinnamon 
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 cups granulated sugar
  • 1 cup (2 sticks) butter, softened
  • 4 large eggs
  • 1 cup 100% pure pumpkin
  • 8 oz Green Valley Organics sour cream
  • 2 tsp. vanilla extract
1.  Preheat oven to 350°F. Grease and flour 12-cup Bundt pan.
2.  Combine flour, cinnamon, baking soda and salt in medium bowl. Beat granulated sugar and butter in large mixer bowl until light and fluffy. Add eggs one at a time, beating well after each addition. Add pumpkin, sour cream and vanilla extract; mix well. Gradually beat in flour mixture.
3.  To assemble: Spoon half of batter into prepared pan. Sprinkle Streusel over batter, not allowing Streusel to touch sides of pan. Top with remaining batter. Make sure batter layer touches edges of pan.
4.  Bake for 55 to 60 minutes or until wooden pick inserted in cake comes out clean.  Cool for 30 minutes in pan on wire rack. Invert onto wire rack to cool completely.  Drizzle with Glaze.
Glaze
Combine:  1 ½ cups sifted powdered sugar and 2 to 3 Tbsp. orange juice or milk in small bowl; stir until smooth.
Estimated Times: Preparation - 12 minutes; Cooking - 55 minutes.  Yields 12 to 16 serving.
