{Easy Recipe} Copy Cat Mexican Restaurant Ice Cream

We all love that crunchy, sweet ice cream dessert found at Mexican restaurants. It is one of those treats you order to share with others at your table! My daughter and I made this dessert at home a few years back. This is the perfect dessert to get the kids to help make and serve at your Cinco de Mayo party or with any fun family night meal.

"Deep Fried" Ice Cream

Ingredients
4 c. bite size crispy cinnamon rice cereal squares, crushed
1 c. mini semi sweet chocolate chips
2 pts. vanilla ice cream
1/2 lb. fresh sliced strawberries, hulled & sliced
Garnish: honey, whipped cream

Directions
Combine cereal and chocolate chips in a bowl; set aside. Scoop 8 balls of ice cream with an ice cream scoop. Quickly roll ice cream balls in cereal mixture; mound balls in a 9" pie plate. Coer; freeze at least one hour until firm. At serving time, top ice cream balls with strawberries. Drizzle with honey and dollop with whipped cream. Makes 8 servings.

Kitchen Notes: I made this on a whim and used what I had on hand. We omitted the chocolate chips and strawberries. Instead of honey we used caramel sundae syrup and topped with a cherry. All easy changes and this is now a new go to recipe when we need a sweet Mexican treat!

Taco Fresco Chicken Wrap {Cinco de Mayo Recipe}

My family loves Mexican food. You name it and we have probably eaten it somewhere. At least once a week or every other week we eat mexican food. I'm not sure we have one favorite dish but we all love salsa and guacamole!  How about your family? Do you have any favorite mexican recipes? Feel free to share them in the comments!

Taco Fresco

Taco Fresco Chicken Wrap: Wrap in the spice with this recipe for a chicken wrap that is both healthy and flavorful!

Ingredients

1 lb. (16 oz.) of chicken strips
1 Nueva Cocina Taco Fresco Seasoning Mix
1 bag of wraps
1 cup of low fat mayonnaise
Lettuce, tomatoes, etc. (any garnishments to your liking)

Directions

Season chicken strips with ½ of the Nueva Cocina Taco Fresco Seasoning mix.  
Pan sear them until cooked through or bake them in the oven at 350° for about 15 minutes.  
Mix the other half of the Seasoning packet with mayonnaise. 
Spread the mayonnaise mixture onto the wrap, add the chicken and any other garnishments, then wrap.

Kitchen Notes

This is a guest recipe. For us, we do not use low fat ingredients and would just use regular mayonnaise.

Nueva Gazpacho {Spring Recipe}

Spring has not sprung where we live but I'm ready to share and make some lighter, springy recipes. How about you? What are some of your favorite spring recipes? This Mexican recipe is perfect for up and coming Cinco de Mayo, too!

Gazpacho Recipes


Nueva Gazpacho:  Soup at a picnic?  Si! Use Nueva Cocina Tortilla soup as the flavorful base to save time and add fresh vegetables for a classic cold vegetable soup.

Ingredients

1 bag of Nueva Cocina Tortilla soup
4 cups of water (for soup)
1 Tablespoon of hot sauce (optional)
4 baby carrots
1 stick of celery
1 small green pepper
1 avocado
1 cucumber

Directions

Cook the soup as directed, let it cool in the refrigerator.  Peel cucumber and remove seeds. Chop all of the vegetables into large chunks except for the avocado.  Use a blender on pulse speed to combine soup and vegetables.  Let chill for 30-40 minutes.  Serve very cold.  Garnish with chopped avocado on top.

Chicago Cinco de Mayo at Tokio Pub's $1 Tacos

If you are in Chicago today for Cinco de Mayo, pop on over to Tokio Pub for $1 Tacos all day long! We love mexican recipes! We are on the opposite end of Illinois but if we were near Chicago we would be at Tokio Pub getting these tacos. Don't they look delish?

Did you know, literally translated, Cinco de Mayo just means the 5th of May, but to Mexico Cinco de Mayo is a celebration of a victory over the French army.  Those wanting to celebrate their Mexican heritage will celebrate Cinco de Mayo in other places besides Mexico, and the celebration can be big or small.  You can make some crafts and decorations with your kids and hang them around the house while you talk a little about what the holiday means, making it a great teachable moment where you can give some history of Mexico and the struggles that they had before they become independent.  Then top off the lesson with some traditional Mexican food and drinks.  These 24 blog entries will show you how your Cinco de Mayo can rock!
Crafts

George Duran’s Mexican Beer Battered Tempura Recipe

Celebrity Chef George Duran is sharing another Guest Chef recipe with us! Have you ever made a tenpura batter with Mexican Beer? Try this delish George Duran's Mexican Beer Battered Tempura Mexican Recipe for a new twist on tempura.

I have not made tempura for a long time. The next time I do, I will for sure be using a Mexican Beer! How about you?

George Duran’s  Mexican Beer Battered Tempura Recipe

Ingredients
·         1 bottle of cold Mexican beer, such as Corona or Dos Equis
·         1 cup of flour, plus more for flouring
·         1 teaspoon of salt
·         6 large raw shrimp
·         1 small sweet potato
·         1 small red pepper
·         6 asparagus spears
·         1.5 quarts vegetable oil for frying
·         Tempura sauce or dumpling sauce for dipping

Preparation
1.       In a bowl, mix 1 cup of beer into the flour. Then add enough beer until the batter is smooth and lightly coats a spoon. Mix in the salt.
2.       Make several shallow cuts across the inside curve of each shrimp. Press the shrimp gently to help prevent curling.
3.       Flour the vegetable pieces and the shrimp, and then set them aside.
4.       Heat oil in the IMUSA Non-Stick Wok (found at Target) until it reaches 375° F.
5.       Working in small batches, dredge each vegetable piece until they are completely coated and place in IMUSA wok for 2-3 minutes, turning often, until golden. Then, place each piece on the drip tray. Dredge the shrimp last and fry the pieces for 3 minutes until golden brown.
6.       Serve the tempura with dipping sauce.
7.       Note: You may use many other sliced vegetables for this recipe including mushrooms, zucchini, yellow squash, carrots and turnips.

George Duran’s Arroz con Pollo Mole for Cinco de Mayo

Celebrity Chef George Duran is sharing one of his tasty Cinco de Mayo recipes with us today as Guest Chef. I have never made any Mole Mexican recipe. His Arroz con Pollo Mole (Mole Rice and Chicken) sounds and looks DELISH!

George Duran’s Arroz con Pollo Mole (Mole Rice and Chicken)

Ingredients:
·         2 Tbsp. toasted sesame seed
·         1 tsp. cinnamon
·         1 tsp. mild chili powder
·         1 tsp. cumin
·         ½ tsp. ground allspice
·         2 tsp. salt
·         6 chicken thighs, skin removed
·         ½ C. flour
·         1 Tbsp. vegetable oil
·         salt and pepper
·         6 slices bacon, chopped
·         1 medium red onion, chopped
·         2 red pepper, chopped
·         6 cloves garlic, minced
·         2 C. rice, uncooked
·         2 6-oz. can tomato paste
·         4 oz. semi-sweet chocolate, chopped
·         6 C. chicken stock
·         Curly parsley, finely chopped, for garnish

Preparation:
·         Mix first 6 ingredients in a small bowl and set aside.

·         Dust chicken thighs with flour and season with salt and pepper. Heat vegetable oil in your IMUSA Non-Stick Caldero on medium-high heat and cook chicken until browned, about 3-5 minutes on each side. Set aside.

·         Lower heat to medium and cook bacon until slightly browned. Add onions, red peppers and garlic and sauté until softened, about 3 minutes. Add rice, tomato paste, chocolate and dry spices and mix. Add chicken stock and mix again. Allow to come to a simmer, cover and turn heat to low. Simmer for 25 minutes.

·         Uncover, and gently mix rice and add chicken thighs on top. Cover and continue simmering for 20-25 more minutes until thighs and rice are cooked. If needed, add more stock or water until rice is done.
