Happy National Chili Day! 20 plus Chili Recipes to Celebrate! {February 27}

My family calls fall in Southern Illinois Hot Dog and Chili Season! Almost every event we go to someone had hot dogs and their famous chili. We honestly do not get sick of chili until mid winter.  When that happens, I'm done adding it to our family menu plan until the next fall. How about your family? Do you like chili? {Easy Game Day Recipes} Chili Cheese Nachos

From Fall through Winter we love Chili. My easy chili recipe is below. I make it at least every 3 weeks. When we need a fun recipe, especially for game day or a Super Bowl Recipe we take the chili and turn it into nachos! These nachos use Fritos. Enjoy them! 


Chili Cheese Nachos

Ingredients

Any Chili recipe (I use Easiest Chili Recipe EVER)
Large dip size Fritos
Shredded Cheddar cheese

Directions

1-Make Chili
2-Add Fritos to a plate
3-Add some shredded cheese
4-Scoop on chili without the juice
5-Add on shredded cheese, jalapeƱos, black olives, onions,etc
6-Eat

{National Chili Month} Chili Cheese Nachos and 19 Chili Recipes

What are some of your favorite fall recipes? Without a doubt my chili is one of our family favorite recipes which gets made over and over and over from the beginning of fall until the beginning of spring. I make the same few recipes but am always on the look out for new chili recipes to try on my family. Below are some tasty chili variations from some of my favorite foodie bloggers.

October is National Chili Month. In Southern Illinois we call October hot dog and chili month because every single party we go to they serve hot dogs and chili of some variation. Even though we eat chili throughout the month at various parties, I still make my favorite chili recipes and try new ones at home.

Super easy White Chili Chicken Fall Recipe

I've been making this exact chili chicken recipe for over 20 years. My first time having this fall recipe was back in the late summer of 1993. My coworkers made this at my bridal shower. Once eating it I knew it was a recipe my soon to be hubby would also love. We make it several times a year during the fall and winter months. It is easy to make and by now most people have heard of white chili and/or have made it. In case not, I'm sharing it with you.

White Chili

Ingredients

1 jar Randall White Northern beans (I've never seen another brand but it is OK to use a different brand)
3 large chicken breast, cooked & shredded
2 large onions, chopped
1/2 c. garlic, minced
1 bunch of celery, chopped
1/2 c. jalapenos from a jar
1/2 c. jalapeno jar liquid
1- 2 quarts of chicken stock (varies on how juicy you want your chili)

Directions

1. Pre cook the chicken in 6 cups of water, seasoned with salt, pepper, celery salt or seeds or seasoning salt. Use 1/4 cup of any combination of the seasonings.
2. Simmer it on the stove for 45 min- 1 hour. Keep an eye on the water. Add to it as needed to keep water above the chicken. This will give you some chicken broth, too.
3. Once chicken is soft, shred it. To save time you can use a store purchased chicken (I do buy a cooked chicken sometimes for this recipe.)
4. Once chicken is cooked and shredded, add in all the above ingredients in a large pot. Cook all together, simmering until it the celery and onions are soft. This usually take 1- 1 1/2 hours.
5. We always offer salsa, extra jalapeƱos and sour cream to be added in by each person. I never add anything in but my family mixes up their own favorites.
6. Serve with corn bread or a favorite crusty bread.

Kitchen Notes

I always make a double batch so we have extra for leftovers & lunch.

To save money, I often use dry white northern beans. If I'm taking this route, they have to be presoaked and cooked until semi soft before adding in with all the other ingredients. Follow the directions and time needed for prep on bean bag on pre soaking and cooking.

If I'm tossing this in the crockpot, which I often do these days, I have the jar beans, uncooked chicken and add them and the rest of the ingredients in the crockpot to cook 6-8 hours. Right before I'm ready to serve, I pull out the chicken and shred. To save time, sometimes I cut the chicken into pieces and add to the crockpot and then I don't shred.

As with any recipe there are a zillion of ways to do it. Find what works best and be flexible to make changes that works best for you and for what ingredients you have on hand.

Creamy White Chili a Gooseberry Patch Favorite Fall Recipe

From Gooseberry Patch: With the official start of fall just a week or so away and a welcome nip in the air around here (sorry, Texas!) we are definitely in an autumn state of mind when it comes to the kitchen. Creamy White Chili 

This recipe was shared by Janelle Dixon of Fernley, NV and has such a fabulous flavor with its blend of green chiles, cumin, sour cream and chicken.Thanks again for sending it in, Janelle!

Ingredients

1 T. oil
1 lb. boneless, skinless chicken breast, cubed
1 onion, chopped
14-oz. can chicken broth
2 15-1/2 oz. cans Great Northern beans, drained and rinsed
2 4-oz. cans chopped green chiles
1-1/2 t. garlic powder
1 t. salt
1 t. ground cumin
1/2 t. dried oregano
8-oz. container sour cream
1/2 pt. whipping cream
10-oz. pkg. corn chips
8-oz. bag shredded Monterey Jack cheese

Directions

Heat oil in a large skillet over medium heat; add chicken and onion.
SautƩ until chicken is cooked through; set aside.
Combine broth, beans, chiles and seasonings in a large soup pot over medium-high heat; bring to a boil.
Add chicken mixture; reduce heat and simmer for 30 minutes.
Add sour cream and whipping cream; mix well.
Top with corn chips and cheese. Serves 8.

Easiest Chili Recipe Ever

I will share this recipe with you *ONLY* if you PROMISE not to tell my family how easy it is to make! I always get a lot of compliments when I make it from them and anyone else who eats the chili. This recipe is for a large pot of chili. It is one of our all time favorite recipes and it is made at the start of fall and up to the first of spring. It is rare but upon request I will make it in the summer using the crockpot.




Easiest Chili Ever

Ingredients

2 large onions, cut in strips, diced,etc
2 tsp olive, veg or canola oil
2 green peppers, cut in strips, diced,etc
1 bulb of garlic, cut in slices, minced,etc
3 large cans of diced tomatoes
1 large cans of tomato juice
1 large tomato juice can of water
3# ground turkey, beef, chicken,etc
3 cans dark kidney beans
1 Tbsp celery seed
1 Tbsp garlic powder
1 Tbsp onion powder
1/2- 3/4 c chili powder
1 tsp crushed red pepper
4 potatoes, diced (optional)

Directions

1-Saute onions in oil for about 10 min.
2-Add in garlic and green pepper and saute for a few min.
3-Add meat and cook 10-15 min.
4-Dump in rest of ingredients except kidney beans.
5-Simmer at least 3 hours.
6-About 30 min before serving, dump in beans.
7-You can cook this all day in your crock pot. Just dump it all in, turn it on and leave your house! haha I say leave your house because if you don't you''ll be tortured by the smell, ALL DAY LONG!


Kitchen Tips

We often serve this with Fritos and cheddar cheese for toppings.
