Summer Italian Sub Salad Recipe


This is one of my favorite GO TO pasta salad recipes.  This is great as a meal or as a side dish for a summer get together.  I found this recipe last summer when I was given a chance to review, Make-Ahead Meals For Busy Moms by Jane Doiron.
Make Ahead Meals for Busy Moms
This recipe reminds me of an Italian Sub from Subway.  I serve it with a loaf of  fresh Italian bread!

Italian Sub Salad
1 lb Campanelle or Rotini pasta, cooked and drained
1/2 to 1 cup dill pickles, cut into 1/2-inch cubes
1/2 lb. American cheese, cut into 1/2-inch cubes
1/2 lb. boiled ham,. cut into 1/2-inch cubes
1 small onion, diced
1 small green pepper, diced
3 T red wine vinegar
1/2 cup vegetable oil
Salt and pepper, to taste

-A Day Ahead-
Mix all of the ingredients together in a large bowl.  Cover and keep refrigerated.  
Serves 6-8

*My changes to recipe
-I don't cut anything into cubes.  I just do quick slices on the mandolin slicer.
- I use cheddar cheese
-Instead of ham, I use pepperoni, salami, turkey or chicken
-I use red onion
-I use EVOL instead of vegetable oil
-We use more pickles than recipe calls for and banana peppers.


It really is one of those recipes that allows flexibility! It is perfect to eat a few hours after making or the day after! When I'm taking this to a hot weathered picnic, I leave out the cheese and meat.

  5. We love to try new recipes for pasta salads at our house! I have a couple of different recipes posted on my blog but not one exactly like this one. My daughter would go nuts for this one. It contains her favs- dill pickles and ham! Can't wait to try this one. Thanks for sharing the recipe!
