Piccolini rich in fiber and TASTY! Kid approved recipes

What are some of your families favorite pasta dishes? An easy summer dish for us is the Italian Sub Salad recipe. My girls help make this salad. They can actually make it by themselves, it is that easy! Most of the ingredients you should have at home. Get the kids in the kitchen and make this today! 

Pasta salad recipes

We love Pasta of all sizes and shapes in my house. I'm always looking for fun sauces and new, tasty recipes for our pasta. I just recently learned of the Barilla line called Piccolini. 

Piccolini is a white product pasta that is rich in Fiber! Not just rich but 3xs the richness of fiber! This pasta also provides 30% of daily whole grains (per 100g serving) and looks & taste like regular pasta. Have you tried it on your family?

Italian Sub Salad

Ingredients

1 lb Piccolini, cooked and drained (or any pasta- we like corkscrews or bowties)
1/2  dill pickles, cut into 1/2-inch cubes
1/2 cup banana pepper slices
1/2 lb. cheddar cheese, cut into 1/2-inch cubes
1/2 lb. turkey or chicken breast cut into 1/2-inch cubes/pieces
1/2 pkg of pepperoni
1 small red onion, diced
1 small green pepper, diced
3 T red wine vinegar
1/2 cup extra virgin olive oil
Salt and pepper, to taste

Directions

Mix all of the ingredients together in a large bowl.  Cover and keep refrigerated.  
Serves 6-8. Make it and serve it right away or make it a day ahead.

I have always LOVED my girls in the kitchen helping me. When my twins were 10 and under they would ask to help all the time. They lost interest in the Kitchen BUT I have taught them and do drag them in to help even though they are almost 17. My youngest, 12, LOVES to cook and bake and helps me all the time. All I have to do is give her a recipe and she can make it.

The Channels have an every day mom (like me), professional chef and even a nutritionist.  I personally LOVE watching the Cooking With Kids Channel with Shaina and her 4 kiddos! My kids are not that young but I get a lot of yummy cooking ideas from her.
