I love a good Salmon or Crab patty! I'm very picky when ordering from a restaurant or making at home. I don't like a fishy taste. I like chunky, flaky meat. I also want my patty to be moist on the inside and crisp on the outside. So with those guidelines, I'm always searching for a salmon that is just right to use for my recipe.
