Family Favorite Recipe Turkey Cupcakes

Are your kids picky eaters? Sometimes all it takes is a little fun and a festive presentation to make mealtime a hit! My family loves ground turkey and so I do use it to make meatloaf. Instead of a boring meatloaf get creative and do the unexpected! Try this creative and healthy take on turkey from Nueva Cocina. Who can pass up a mini turkey cupcake?

1 lb. of ground turkey
1 package of Nueva Cocina® Picadillo Seasoning
1 teaspoon of olive oil
½ 8-oz can of tomato sauce
1 egg white
2 tablespoons of unseasoned bread crumbs
Mashed potatoes of your liking
One 6-cupcake baking tray
Cranberries or Raisins

Makes 6 cupcakes

1- Mix the ground turkey (uncooked) with Nueva Cocina® Picadillo seasoning, egg white, bread crumbs, and tomato sauce in a bowl until all ingredients are fully incorporated.

2-Fully fill each of the six slightly greased cupcake holders in the tray with the mixture.

3-Bake in a pre-heated 400-degree oven for 15 minutes, loosely covered with aluminum paper.

4-Take off the aluminum paper and continue to bake for another 5 minutes until the top is browned.

5-Let cool for 5 minutes once out of the oven or until they can be handled with bare hands.

6-“Frost” with your favorite mashed potatoes and place raisins or cranberries on top for decoration and added flavor.
