Amy Sherman’s Popcorn Crunch

I love movie theatre popcorn. Sometimes I'll call my movie buddy and ask her to go with me to the movies JUST SO that I can get popcorn! The only downside is that the popcorn is loaded with not-so-healthy fat and calories. At home I do make my own much healthier! Here is a sweet version that includes peanut butter! I wanted to share a sweet summer snack from foodie Amy Sherman that puts a fun twist on a traditional movie-theatre favorite. Popcorn can be a caloric bomb loaded with fat, and calories (up to 1220 calories per serving!) however, Amy’s grab n’ go Popcorn Crunch packs the punch with a flavor of caramel and toasty nuts that is sure to satisfy your sweet tooth.  

Amy shares, “Sometimes the best recipes are happy accidents. I was trying to make a snack bar but over toasted the mixture of honey, sugar, peanut butter and popcorn. The result? Something much more delicious! A crunchy popcorn mix that is positively addictive.”

Instead of grabbing for the tub of buttery popcorn, package your Popcorn Crunch in cellophane bag as a healthier alternative, and it provides the perfect portion size. 

Oh! And when made in the ActiFry, your sweet treat isn’t popped in loads of saturated oils like concession stand popcorn. 

Amy Sherman’s Popcorn Crunch

1/4 sugar
1/4 cup honey
1/4 cup natural peanut butter
4 cups popcorn

Cook sugar and honey until sugar dissolves about 3 minutes. Add peanut butter, one tablespoon at a time, to prevent it from clumping together. Cook another 2 minutes then stir and cook another 2 minutes. Add popcorn dispersing it evenly. Cook for 3 minutes then transfer to a greased sheet pan to cool.

Was wondering what is the best popcorn to use with recipe? I seem to have all this microwave popcorn I would like to use up.
